The flavor is sweet and tart all at the same time with a really nice dry kick at the end. Really a wonderful Flemish sour. The head is light brown and the body has theis deep brown with a redish edge. I taste grapes, hay, sour winegums and glue. It has a buttery and sparkling feeling in the mouth. Aroma is sweet and fruity, dominated by cherry with added bits of sour dark fruit, wood, and perhaps a bit of spice. Taste is relatively full and very tart, with a strong and sour flavor of cherries and wood. Very strong but not unpleasant by any means; just think of a strong IPA, only fruity instead of hoppy. Malt, citric acid, and just a bit of tobacco predominate in this exceedingly New Glarus fruit beer-esque brew. The finish is long and quite pleasant.
Would be a great accompaniment to a milder washed rind cheese like Pere Joseph or Pont l’Eveque.
