COMMERCIAL DESCRIPTION
Bottle: Filtered.
A blend of 1/3 young beer and 2/3 of beer aged 2 years in large oak vats. The more important proportion of oak matured beer contributes to its fruity taste, complexity and intensity. The finish is worthy of a great wine.

Tap @ Pint Defiance. Clear, reddish-brown pour with a short white head leaving spotty lace. Nose has all the notes I love in a wild ale: tart fruits, grapes and some cured meat. Medium body with light, fine carbonation. Grapes, lemon, cherry and some wood. Finish is more balanced, with some umami flavors creeping in and Brett showing up as butterscotch. I now see where LaFolie was influenced by a Rodenbach brewer (they blend their sours in a similar fashion). Not as good as a full-on Oude Bruin, but still very sippable.

Cherry-red color, small head, which vanishes fast. Funky, sour-cherry, with hints of malt. Malt, bread, a lot of cherries, very ripe, full of flavor. Perfect chewy, tart sourness, with a fruity cherry sweetness. Decent complexity, still easy drinkable. Malt underlines the cherries till the end, holding the sourness at bay. Great balance, fruit stays in the foreground the whole time, resulting in a chewy, sour aftertaste.

Pours cola brown-red with a thin tan head diminishing rapidly to nothing, no lacing. Nose is tart sourness, cherry and balsamic vinegar, woody and musty notes. Taste is lingering sour and tart, cider and oak, faint leather. Mouth feel is light to medium, with tingling carbonation and mouth-puckering sourness that lasts and lasts, without being overwhelming. Close to perfect, but not quite. I found the lack of head development disappointing, and wonder if that contributed to the nose being a little muted. These are, however, admittedly minor quibbles about a truly great beer.

comlex taste to explain - the sours rule, but the overall taste is just "magic". Always in my cellar - but being belgian, thazt should not be too difficult. Nor a surprise.

Pours a dark cloudy brown color with a small beige head. Aroma is mostly sour apple, plums and dark cherries, champagne. Medium sweetness on the taste with a medium to strong sour finish. Bubbly mouthfeel, kind of feels like a sour bubbly champagne and its very good
