Commercial Description:
Bottle: Filtered.
A blend of 1/3 young beer and 2/3 of beer aged 2 years in large oak vats. The more important proportion of oak matured beer contributes to its fruity taste, complexity and intensity. The finish is worthy of a great wine.

Reddish/brown color. Smells of oak and wine. Tastes of oak and cherries? Very sour and acidic, yet quite refreshing. Great balance between tart and sweet.

What a beer ... It was a clear, medium amber-brown color with a small, short-lived frothy head and nice lacing. The aromas were mouth-watering and complex: Raspberry, balsamic vineager, sour cherry, citrus, honeysuckle flower and five-spice powder with trace yeasty aromas of mold and cellar lending earthy balance. The palate was light-to-medium with a luxurious velvety texture and fizzy carbonation. The flavor was equally complex—full, nicely balanced and sweet with a smooth average-length finish.

Wow. I have never tasted anything quite like this one. It pours a dark reddish-brown with an amazingly complex aroma of acidic vinegary tart cherry, sherry, and earth. The flavor was much of the same with some dustiness in it with a slight cherry and vinegar finish. Wow, this beer has done very well doing both sweet and sour, deep and acidic.

I’ve got to take this down a few pegs: sure, it’s got lovely deep red winey mellowness and tasty sourness, but it’s also quite thin and bubbly and acidic. definitely blood, wood and iron in there as rauchbier points out. 25/12/02 on 3rd thoughts, it’s a mother. beautifully smooth, rich and chocolatey as well as sour and way complex horsey flavoursome yum.

Bottle: Dark mahogany/brown, small diminishing head. Wow. This is my first time trying a Flemish sour...and it’s damn good. Very sour aroma of sour grapes, fruit rind, yeast, barnyard, leather, horse blanket, cherries. Reminds me of a gueze with some darker malt backbone. Taste is very, very sour. Cranberry, raspberry, sour yeast, red wine, sour grapes, vanilla, balsamic vinegar. Finishes very dry and acidic, with hints of cranberry, merlot, metal, and a slight nuttiness. Carbonation and body are perfect for this beer. Wow this is damn good.

Dark brown with brown head. Sweet balsamic vinegar nose with cherries poking through. Flavor is the same with acidic flavor that cuts through. Tart, oaky cherries with acid funk.
