I would love to see this with every flavor intensified a couple of notches. Light gold, head was hard to produce until a pour in the middle of the glass. Moderate carbonation, but decent acid. As I said before, nothing really stands out, possibly the smallest bit of crystallized ginger on the finish. Pours a copper-gold color with a meager off-white head that fades to 1/8 inch and holds. Aroma is very light and hints of sweet malts, wheat and some citrus. Flavor is a bit unique and unusual, I presume that a lot of what I’m tasting is the roasted buckwheat, it reminds me of straw, hazelnuts and persimmons. hops are well integrated and barely noticeable. I am not sure what it is, but there is something unique about it. I am not sure if it is the soba or not. I know deep down it is something plant like, but the only thing I can think to say is that it smells like a dirty sock...but in an organic way. There seems to be a slight touch of citrus on the nose too. Taste is smooth with a silent start that turns to the soba and grain body. Mouthfeel is good.
