It poured out a nice amber color, with a very foamy lasting head. The taste was a little sweet but contrasted nicely with the tangy herbal aroma, kind of like green tea. Good stuff! I don’t like to throw around superlatives but this is a truly great ale. One of the cheesiest ales I have ever had and I really mean that in a good way. The yeast is really special in this beer. Just the right amount of bitterness then it finishes with cheese and malt. Not overly sweet. Aroma is gentle yet has a definite herbal hop character. No complaints. Malt aromatics predominate, with a complex accent that is reminiscent of wheat malt enough for me to assume is the soba. Velvety mouthfeel with an underlying crispness. Roasted. nutty, wheat flavors very similar in some characteristics to the Morimoto Hazelnut. Several hearty flavors, but with a light-medium body that makes it rather refreshing. Tawny burnt orange with a lasting four-finger head. Aroma is mild honey and lightly toasted grain. Wow, great initial flavor of toasty buckwheat pancake, with a touch of honey, and a side of slightly sour citrus. Unfortunately, the buckwheat flavor doesn’t stand up to the other flavors throughout, and kind of disappears at times. Smooth light-medium body has just enough tingle and finishes a little to the dry side. Pours Golden w/ amber hues, however so light. Small white head that’s quickly dissipating. Where the hell does the smell come from? Coffe and chocolate, espresso. Taste is crazy; chocolate w/ a hint of coffee and nutty. Awesome thin, light mouthfeel, oily and viscous (I know, conradictory: Really good "ale". Aromas of biscuit, bread, and some chocolate. Tastes bready, buckwheat, lactic, ginger. Palate is nearly chewy. Interesting, different, and grew on me as I drank.
