COMMERCIAL DESCRIPTION
Although we enjoyed aging Batch #1 in used La Folie barrels from New Belgium Brewery, one of which was the renowned PH1 barrel, Batch #2 is something completely different. After a trip to Belgium in 2006, Vinnie successfully tried his hand at spontaneous fermentation using traditional, and not so traditional, Lambic methods. Out of respect for our Belgian brewing friends, we call this style “Sonambic”, a portmanteau between Sonoma and Lambic.

We stole this term from our friend Brian Hunt at Moonlight, our local farmhouse brewery. In 2007, we executed a second spontaneous fermentation, making yet another batch of Sonambic. This year, we blended those two batches to create our second bottling of Beatification which we are very excited about! Batch #2 has a big grapefruit aroma and grapefruit rind flavor with funky Brettanomyces and a tart finish.

Gift from Sj. WHat I loved about this one was the earth, tart, fruit and citrus flavors. However, there is so much more complexities going on in this beer, I can’t figure it all, but with that said, it is amazingly blended well.

bottle shared by Marcus.pours gold with a small white head. Aroma is spoiled wine. Flavor is very sour like a war head that finishes bitter.

Batch 2 375 bottle. Pours flat with no carbonation. Hazy yellow. Huge nose full of citrus and Brett. Taste is sharp and tangy, with a very lemony/citrus flavor. The brett is subdued. Teeth numbing tartness. Still very nice after all these years.

Batch #004........Aroma is full of funk, it also carries a certain lemon rind or citrus in the nose. The appearance is a crystal clear golden color with bubbles streaming off the bottom of the glass. The taste is very nice. The sour notes come through very crisp and clean with some grapefruit flavors coming through. It is a very drinkable beer and it definitely doesn’t lack flavor.

Bottle, batch 002. Clear piss yellow pour with a hint of white head. Enticing lemon zest and funk aromas. Tart, crisp, and clean with all kinds of lemon zest, sour vinous & grapefruit, barnyard, and funk notes. Absolutely freakin’ delicious...

Tasted on 11/11/11 from a corked and caged 375mL bottle obtained in a trade from SourNotes, Batch 002. Pours cloudy light orange with just a thin white layer of lace that quickly disappears, leaving nothing. The nose is fresh grapefruit, sour lemon (peel and flesh), tons of earthy barnyard funk, green apple, white wine vinegar, and just a hint of a fleshy red berry aroma as well. The flavor is sour lemon, fresh grapefruit, fleshy red berries, green apple skin, tons of earthy barnyard funk, and a vinous note. The body is medium with sticky tannins, light carbonation, and a long, sour lemon, grapefruit peel, and bretty barnyard funk finish.

Pours hazy yellow//orange with a small white head. Aroma has lemon, lime, orange peel, apricot, lusty sourness, oak sweetness and all the fruits of a well-crafted sour ale. Lots of sour berries - supremely balanced and well-managed. Taste has tons of lemon (das autozitron!), tart, yeasty funkiness, lemon peel, some grapefruit - also extremely fruity. Plenty of sour grapes and berries - more geuze than Wild ale, really. Very nice texture, adequate carbonation.

Batch 002. Bottle looks simple but good. Beer in the glass deep golden, no head. Starts very intense sourish, salty, a bit moldy. Dry background. Fruity like lemon and grapefruit. Finish a bit milder, but still very sour. Not my favourite!
