Commercial Description:
Although we enjoyed aging Batch #1 in used La Folie barrels from New Belgium Brewery, one of which was the renowned PH1 barrel, Batch #2 is something completely different. After a trip to Belgium in 2006, Vinnie successfully tried his hand at spontaneous fermentation using traditional, and not so traditional, Lambic methods. Out of respect for our Belgian brewing friends, we call this style “Sonambic”, a portmanteau between Sonoma and Lambic. <br /><br /> We stole this term from our friend Brian Hunt at Moonlight, our local farmhouse brewery. In 2007, we executed a second spontaneous fermentation, making yet another batch of Sonambic. This year, we blended those two batches to create our second bottling of Beatification which we are very excited about! Batch #2 has a big grapefruit aroma and grapefruit rind flavor with funky Brettanomyces and a tart finish.

March Houston Tasting. 1100th Rating. Pours a bright golden color with not real head. Nose of citrus, earth, spices, oak and sandalwood. Flavor is tartness with citrus peels and wood. Good carbonation with medium body. Finish is dry and lingering.

Golden orange in colour with a thin but lasting white head, light lacing. The aroma is incredibly tart and sour, fairly acidic, lots of lemon citrus, brett, very lambic like. The flavour is all sour and acidic, very dry, lots of citrus, cheese, some leather, woody. Huge sour mouthfeel, medium body, high carbonation. Finishes very long, sour, quite intense.

This is very good. An American gueuze. Russian River always amaze me. This one was so complex and funky, awesome stuff.

Batch 2 375 ml. I think this rating came from a night where I was hanging out with BrianK and Rciesla. Thanks guys. Pours a peachy hazy golden yellow with a thin lasting white head. Aroma is nice lambic-like, funky brett Lambicus, goaty, citrus and lemony with a very herbal horse funk. Citric and lactic acid- sharp, funky horsey goat, just some nice real raw lambic like character- old woodiness similar to a cantillon 1900, sour orange zest, slight sweet, lemon and a great sour funky finish. Awesome.

Wonderfull full body flavorfull sour. Tons of acidity and tartness. Lemon zest and wood but the wood is faint. Lots of sour fruit and tartness from grape skin and peach too. Awesome!

375mL Bottle. Tart, heavy lemon-juice nose, balanced with some spritzy carbonation bubbles, and a waft of oak. Bold, funky and heavily influenced by the more unique lambics. Pours at first a crystal clear pale gold, later a heavily murked milky golden, with a thin rim in white. Flavor is immediately reminiscent of gueze. Distinctive tartness runs on the side of lemon juice, other citric characters, and barnyardy goatness. Fresh. The barrel seems to lay back for me. It’s more of an acid front, balanced with cotton and some of the base complexity. Grape skins and some old white grape juice come to mind. Delightful and complex overall. Another one of the few American sours that approaches Gueze. Thanks Andy!

Big thanks to DRINKNDRIVE for this 375ml bottle. I opened this one very carefully over the sink and there was no explosion like I experienced with Supplication. The first sniff from the bottle is sour juiciness. The color is white-yellow with some sudsy bubbles. More sour juicy smell with a hint of musty funky acrid sweat. Dusty basement smells also. Brutal yet beautifully sour taste like lemonheads candy. Citrus lemon is mostly what I taste in addition to the sourness and some acidity. Overall, this is really awesome if you like sours. This also has more funkiness to it than the supplication I had a couple days ago. I thought the supplication was better. update 02/28/09 batch 002 really reminds me of gueuze, cheesy, funky aroma, puckering lemon juice sourness that contorts my face! (Bottled) Hazy yellow with a small, white head. Tart aroma with oak barrel, lots of vanilla, some lemon, pale malt. Tart and fruity flavor with grapefruity acidity and some residual sugars, not much oak. Hides all of the alcohol. Medium-bodied, dry and astringent palate with some sugar-stickiness and low, but slightly tingly carbonation. An enjoyable and balanced sour ale.

Poured hazy yellow-gold with a ring of white bubbles and an oily film. Decent lacing. Bitter, bitter nose. Apricots, apples, sour peaches, white vinegar, and yeast. Taste is very bretty, sour to a cheesy/buttery flavor. A fair amount of citrus; lemon zest, pineapple, mango. Slight oakiness, similar to what one would find in a white wine. Lighter mouthfeel with moderate carbonation. Delicious.
