COMMERCIAL DESCRIPTION
Although we enjoyed aging Batch #1 in used La Folie barrels from New Belgium Brewery, one of which was the renowned PH1 barrel, Batch #2 is something completely different. After a trip to Belgium in 2006, Vinnie successfully tried his hand at spontaneous fermentation using traditional, and not so traditional, Lambic methods. Out of respect for our Belgian brewing friends, we call this style ďSonambicĒ, a portmanteau between Sonoma and Lambic.

We stole this term from our friend Brian Hunt at Moonlight, our local farmhouse brewery. In 2007, we executed a second spontaneous fermentation, making yet another batch of Sonambic. This year, we blended those two batches to create our second bottling of Beatification which we are very excited about! Batch #2 has a big grapefruit aroma and grapefruit rind flavor with funky Brettanomyces and a tart finish.

Bottle. Very sour nose, taste, and across the palate. Citrus acid and white wine nose with a little barnyard that comes in well through the beer and when youíre past the sour taste. Very sour taste which is why i prefer this beer a year or more down in the cellar. Exceptional sour.

375 ml corked and caged bottle poured into a mini snifter. Pours a pale yellow with a white head of foam. Dry, floral sourness. Light body and high carbonation. Peaches and apricots and pineapple sweetness in the taste with a more subtle sourness. Pretty good.

This beer smells great. Smells like grapefruit juice that has been sitting in oak barrels for, well, 9-19 months. Pours a honey golden color with very minimal head. NEGATIVES: Dammit, I just donít like sour beer! So if you love sours, this is your beer. It has complexities like you canít imagine. Barnyard funk (which I like), grapefruit (which I like) and tannins. If you donít like sours though, and this is my third, so I know I definitely donít like them, you wonít like this one.

Clear golden colour, white head. Aroma of brett, stable, lambic, citrus. Sour flavour, very sour. Citrus, citric acid, brett. Quite sour, but somehow still with some balance.

Clear pale body with no head at all. Aroma has sour peach, cherry, light woody. Taste has grapefruit sourness with medium tart support, high fruit sweetness. After taste is little bit astringent. Body is full, light carbonation.

At quintessence. Hazy golden colour with white head. Fruity, banana, brett aroma. Sour, banana, slightly fruity tatse. Medium body.

@ Quintessence - hazy golden-yellow color, with a small white head. Very funky nose, leather and cheese, fruits, with a subtle sweet touch in it. Sourness gets unleashed on the palate in a wild way, tartness, lemon peel and unripe grapes, along with hints of orange and apple. Straw and wooden malt feather the sourness a bit, which still comes along pretty untameable. Sweet orange stays in a sharp contrast to zingy citrus, along with vinegar and Bretts lingering on the palate. High level of acidity is outstanding, chewy and raw, resulting in a very dry and crisp ending.

Bottle. From Mike. Nose of funk with barnyard and citrus. Flavor is the same with a lot more citrus. Pretty freaking awesome.

Bottle share hanks to Homer. Pours golden yellow, almost no head. Aroma is tart, sour. Taste is strong sour. Light, refreshing, mouth is still puckering, feeling some sour burn.
