Although we enjoyed aging Batch #1 in used La Folie barrels from New Belgium Brewery, one of which was the renowned PH1 barrel, Batch #2 is something completely different. After a trip to Belgium in 2006, Vinnie successfully tried his hand at spontaneous fermentation using traditional, and not so traditional, Lambic methods. Out of respect for our Belgian brewing friends, we call this style “Sonambic”, a portmanteau between Sonoma and Lambic.

We stole this term from our friend Brian Hunt at Moonlight, our local farmhouse brewery. In 2007, we executed a second spontaneous fermentation, making yet another batch of Sonambic. This year, we blended those two batches to create our second bottling of Beatification which we are very excited about! Batch #2 has a big grapefruit aroma and grapefruit rind flavor with funky Brettanomyces and a tart finish.

[ Trade by Bobby91w ]. Clear medium orange color with a average, frothy, good lacing, mostly diminishing, white head. Aroma is moderate to light heavy citrus - tart - acidic, barnyard - leather, wood. Flavor is moderate moderate to heavy sweet and acidic - sour with a long duration, and a dry finish. Body is medium, texture is watery to oily, carbonation is soft. Very nice og lovely, but not as complex as smoe of Belgien one’s ;o) [20090606]

RB #5300: 37.5 cL bottle. Pours hazy yellow to orange with a fully diminished white head. Solid dry brett, horseblanket and wooden aroma. Dry and citric to acidic initial flavour. Light orange fruity flavour mixed with a nice wooden note. Remains refreshing fruity. Ends lingering acidic and fruity. Nice.

Ungstrup (34690) - Citizen of the universe, DENMARK - JUN 5, 2009
Bottled - had it twice with the exact same score. An unclear golden beer with a thin white head. The aroma has lovely notes of wood, brettanomyces, and lacto basillicus as well as medium notes of citrus fruits - seemingly both sweet and tart. The flavor is acidic with a bit of sweetness and notes of lemon, wood, brettanomyces, and other fruits, leading to a lovely tart finish.

Bottle, thanks to Ambassador for sharing. Hazy yellow coloured with a medium sized white head. Fruityand light acidic aroma of wood and brett with notes of blue cheese and vanilla. Light acidic flavour of wood, brett and vanilla. Tart finish of wood and brett.

Bottled (from Cracked Kettle). Golden colour, small white head. Aroma is hops, sour fruits, yeast, some mild zestyness and also wood. Flavour is sourness, dry wooden notes. A brettbomb, which is very drinkable and pleasant.

(Bottle 37,5 cl) Courtesy of WeeHeavySD. Slightly hazy pale golden with a small creamy white head. Distinct sour Brett aroma - it really hits you. Medium body, a little low in carbonation, quite fruity and then again distinct Brett with the usual notes of horse blanket and fart. Astringent sour finish. 220608

Bottle. Batch 002. Pours a slightly hazy golden orange color with a small fast disappearing white head. Has a fruity yeasty barnyard aroma. Sour tart fruity citrus flavor with some yeasty hints. Has a sour tart fruity citrus finish.

THE Sour and Saison tasting. Batch 5 - thanks Bruce. Light haze on this gold beer, little white head. Crisp palate - dry. Fairly sharp lemony sourness. A little seltzer minerals. Sharp orange peel. White wine vinegar in the semi dry finish. Okay but could not drink much of it.

Batch 3, 750 ml bottle courtesy of GT, the results of a great trade. Clear to cloudy golden with a medium white head. Aroma of lemon and grapefruit with a background of white pepper. Very full bodied. Flavor starts with citrus and progresses to a complex sourness, with a dry finish. Very interesting. Not funky. Great example of the style, although you can;t say the style out loud.
