Ale with currants added and aged in oak barrels.

When we made the Toronado’s 20th Anniversary Ale, we had no idea that it would turn out to be one of our favorite barrel aged beers we would ever make. With that said, we have always wanted to make a dark barrel aged beer using 100% Cabernet Sauvignon barrels but, we never were inspired. That is, until we blended five different beers to make the Toronado beer, the tobacco character from the the dark malts blended nicely with the furit character that developed in blending. So, with Concescration we set out to make a barrel beer using all Cabernet Sauvignon barrels. No, we are not saying that this is a replica of the T-rooms anniversary beer, after all, a beer like that can never be duplicated, and, there was no fruit added to that beer as there is with this one. All we are saying is that it gave us great inspiration to brew Consecration.

Perfect in all aspects. So great aroma of white wine grapes and peppery oak. Taste is tart with a vinous soothing flavor. Oak finish and lively carbonation. Awesome brew.

Bottle, 37,5cl corked and caged thanks to Erik. Pours a dark reddish, unclear brown with an off white, short lasting, fizzy head. Aroma has lots of oak, tobacco, darker malts, black currant, vinous, tart stuff. Taste is very tart at first, but has lots of deeper, darker malty and fruity notes. Some sweetness, but only just enough to balance the tart stuff. Alcohol is present for sure. Very nice and powerfull sour!! Full body and med high carbonation.

Yes a 5. Why? If this isn’t a 5 than I don’t know what is. If I find something better I will knock this down a click or two. Shared with Dan and Brian Ge at the house (on my birthday.) Small snifters. Pours a deep reddish brown with no head. The aroma is super tart fruits and red wine cabernet barrels. The taste is amazing balanced and smooth. It’s not too tart or funky, just right. The blend of the dark fruits and the Cabernet barrel was spot on. The texture is awesome and light. It’s just simply awesome.

Shared bottle. Pours clear, dark caramel with fizzy off-white head. Aroma is balsamic, cereal and toasted malts, vanilla, oak, and dates. Flavor is bready malt profile with some caramel, plenty of dark fruit sour notes, and some subtle acidity. Medium body and carbonation.

Bottle from Nov 2013 drank Jan 2015. Pours with a vigorous fleeting head and deep ruby color. Aroma is very big red wine, must, berry, and deep sour. Flavor is very tart and forward currants with wine notes throughout. It’s a bit sacrin sweet but balances by a dynamic interplay of everything else. It could age longer but is lovely now with no apparent signs of age. Feel is both citric and lively but dense and silken over a long finish. Even though I have had it a handful of times before this is astonishingly good.

750 ml bottle from batch 1 X 003 I think from notes. Pours a dark reddish brown color with a small beige head. The aroma and flavor have big tart/sour berries and dark fruit character, oak, cherry, vanilla, funk, some vinegar comes through, the cab barrel influences are noticeable and work well with the base beer. Absolutely no sign of the 10 %. Another solid RR beer
