Ale with currants added and aged in oak barrels.

When we made the Toronado’s 20th Anniversary Ale, we had no idea that it would turn out to be one of our favorite barrel aged beers we would ever make. With that said, we have always wanted to make a dark barrel aged beer using 100% Cabernet Sauvignon barrels but, we never were inspired. That is, until we blended five different beers to make the Toronado beer, the tobacco character from the the dark malts blended nicely with the furit character that developed in blending. So, with Concescration we set out to make a barrel beer using all Cabernet Sauvignon barrels. No, we are not saying that this is a replica of the T-rooms anniversary beer, after all, a beer like that can never be duplicated, and, there was no fruit added to that beer as there is with this one. All we are saying is that it gave us great inspiration to brew Consecration.

Salmoniform (1137) - Sweet Home, Oregon, USA - JUN 9, 2014
Poured from bottle to glass. Copper amber hue with off white fizzy head. Aroma is lactic, oak, sour cherry, wine grapes, acetic, malic. Mouthfeel is great with a medium light body and fizzy carbonation. Taste is dry throughout with tart sourness exploding through the finish and wrapping up with a nice tannin finish. Overall this is an exceptional sour brew!

Tasted from bottle. Pours a dark ruby looking almost identical to a port wine with thin white head that quickly fades. Aroma is very complex. Smells vinous with the Cabernet definitely prominent. Cherry, prune, figs,, plums, brown sugar. Taste is very similar to smell. Moderate to heavy sweetness followed by a moderate sour flavor. I'm not a big sour fan but this is very good. Medium bodied with sticky and clingy mouthfeel. Flavors of cherry, prune, Cabernet. From a guy who is not a big sour fan even I'll admit this is a very complex and tasty beer. ---Rated via Beer Buddy for iPhone

Bottle share. Batch 013113. Pours a cloudy burnt red. Aroma of dark fruit, wine. Taste is tart. Brilliant crisp mouthfeel and dry finish.

Draft at brewpub. Pours slightly garnet hued porterish color. Aroma is currants, port, sour cherry, lemon, roast, caramel. So much complexity. Taste is sour cherry, coffee, and roast fading into lemon juice, lemon zest, long finish. Amazing. Probably my favorite regularly available Russian River sour.

Draught at Westend tavern. Dark ruby color, white head. Bitter/sour taste with tart, cherry, acidic notes, tannins, hops and ripe fruits. Bitter/sour finish with cherry, ripe fruits and tart. Exquisite sour red.

Aroma of dark fruit, wood, vanilla. Taste is dark fruit and woody. Get some of the peppery flavors from the cab barrels and other wine flavors. So complex and so many flavors. Full flavored. Well balanced for a sour. Lactic but maybe 6 or 10. Could be more lactic but the amount of lactic sour is balanced. 340 ratings before giving a 5, but I think this deserves it. The smell is dried fruit, sour/tart cherries, hint of sweet booze, the look is murky brown with a little light coming thru. White low head, the taste is tart, fruit, boozy, but smooth. Even after the swallow the sour taste is smooth. I know many can’t get a hold of this, but if you do, you will agree it’s the best sour out there, no question!

Sampled at Russian River, Santa Rosa, CA. The taster glass arrived with virtually no head on this dark brown/hint of red wine-colored beer. Aroma is complex: sour cherries, wood and yeast. Flavor is tart and funky - delicious and quenching. Finish is vinegar and puckering. Delicious. From notes 2/19/13.

Their sours never fail...nice tart aroma and darker than most sours, and while I prefer some of the ones aged in white wine barrels, this is impressive.
