COMMERCIAL DESCRIPTION
Ale with currants added and aged in oak barrels.

When we made the Toronado’s 20th Anniversary Ale, we had no idea that it would turn out to be one of our favorite barrel aged beers we would ever make. With that said, we have always wanted to make a dark barrel aged beer using 100% Cabernet Sauvignon barrels but, we never were inspired. That is, until we blended five different beers to make the Toronado beer, the tobacco character from the the dark malts blended nicely with the furit character that developed in blending. So, with Concescration we set out to make a barrel beer using all Cabernet Sauvignon barrels. No, we are not saying that this is a replica of the T-rooms anniversary beer, after all, a beer like that can never be duplicated, and, there was no fruit added to that beer as there is with this one. All we are saying is that it gave us great inspiration to brew Consecration.

Dark ruby color with minimal head. Smell is of light sour note of currant. Taste is clean, sour, with nice full oak flavor that balances well to the finish leaving a great aftertaste.

Many thanks to Michael for the bottle. Pours a fiery dark red color, with a fizzy, small head. Smells of an intriguing tart funkiness, part barnyard, part sour, fermented fruit. Both smells blend very well together, supported by a pleasant, wooden malt note. The currants got a sweet, pungent hint to them, which enhances their sour aspect. The fruitiness turns even more present, while the brew warms up. Begins with musty, wooden malts, joined by prickly currants, on which a dry, funky sourness settles, accompanying the fruity acidity. The barrel character provides wooden oak qualities, setting the balance of the beer. Then the sourness gets even dryer and more acidic, drying-out the tongue. Drinks dangerously easy, the alcohol is extremely well hidden. Finishes with matured, slightly wooden, leathery malts, with the addition of ripe grapes, while the tartness covers the outside of my teeth, leaving back a melange of joung currants and slick acidity.

Aroma of dark cherry, vinegar and alcohol. Pours a coke colour with no head or lacing. Taste is sour black cherry, vinegar (not too much), nice nutty dry finish. I always equate a good sour to eating a good sharp cheese. I love this one.

Pours a deep caramel brown, reminds me of Cola. Very lively in the glass with no head. Smells like red grape and cherries though aroma is weak. Taste is tart initially, followed by vinous and cherry notes.

Compliments of my bro Bytemesis! Bottle pours a reddish brown with a thin ice tea head. Aromas of cherry, oak barrel, and distinct Cabernet. Flavor is intensely complex sour and tart cherries. You do not drink this, you experience it. Yum.

Bottle from Felix. Pours ruby red, a fizzy head rests down to a ring around the edge of the glass. Aroma has loads of red currants, slight yeast and funk, wet wood, perhaps some leather, slight alcohol. Taste is a really great blend of tartness, woody dryness and some slight sweetness hidden somewhere in between; currants, cherries, some red wine and earthy bitterness, vingeary tartness, cigar as well? Medium body, high prickly carbonation, dry mouth feel. Something strange in the after taste, can’t put my finger on it.
Overall, a very good take on the Flemish red ale!

On tap at Russian River. Pours slightly porterish color. Aroma is port, sour cherry, lemon, roast, caramel. So much complexity. Taste is sour cherry, coffee, and roast fading into lemon juice, lemon zest, long finish.

10/14/2014. From bottle. Medium brown with a tan head. Funky sour aromas with hints of wine and oak. Not overly sour, but very balanced and complex. Truly an awesome beer.
