COMMERCIAL DESCRIPTION
Ale with currants added and aged in oak barrels.

When we made the Toronado’s 20th Anniversary Ale, we had no idea that it would turn out to be one of our favorite barrel aged beers we would ever make. With that said, we have always wanted to make a dark barrel aged beer using 100% Cabernet Sauvignon barrels but, we never were inspired. That is, until we blended five different beers to make the Toronado beer, the tobacco character from the the dark malts blended nicely with the furit character that developed in blending. So, with Concescration we set out to make a barrel beer using all Cabernet Sauvignon barrels. No, we are not saying that this is a replica of the T-rooms anniversary beer, after all, a beer like that can never be duplicated, and, there was no furit added to that beer as there is with this one. All we are saying is that it gave us great inspiration to brew Consecration.

Had from 750ml bottle. Pours dark red/brown with tan head that dissipates very quickly and some slight blubbles on the edges. Aroma is very tart, sour, citric, hints of cherries, yeast, and alcohol. Taste is amazingly tart, refreshing, citric, and complex. Flavors range from oak to cherries to currants to lemons. Really a treat to have and a wonderfully complicated beer that might require some time to get used to if you’re not a fan of the sours. This sour goes above and beyond the slightly acidic and citric tastes of other "weaker" sours and really punches your tastebuds with flavor. More sour than I remember it on tap, but still an amazingly good beer.

Taste is complex with so many different nuances. Vinegar, oak, wine, alcohol and fruit all make an appearance at one time or another.

Bottle @ FOneFan. Dark amber/brown with small beige head. Aroma is malt, yeast, sour, little caramel, oak and a little dark fruits. Flavour is malt, vinous, dark fruits, medium sweet, vinegar, caramel and oak.

Sample at Central Waters anniversary party. Deep brown with red highlights. Dark fruit, cab, tart acidity, and wood in the aroma. Flavor bursting with tart red wine, meaty dark fruit, currants, cherry/plum, and wood. Lightly sweet. Great residual mix of flavors. Springy carbonation. Excellent.

Bottle @ fonefan tasting. Nice head with medium duration. Color is brown. Aroma and taste are caramel, fruits, brett, nuts, wood and wine.

RBAG 2012. deep brown red color and a fizzy white head with nice carbonation pooling at the surface. aroma has vinous red wine sourness, oak, dark cherry, currant, and tons of delicious funk. crisp mouth feel with nice prickly carbonation at the side of the tongue. flavor has plenty of sourness, rich red wine character, dark berry, oak, currant, and tobacco.

RBAG 2012. Huge thanks to Savvy. Pours dark ruby with some deep brown hues, head is capped out to thin off-white bubbles. Smell is great tartness, morello cherries, lemon zing, slight brown sugar, deep oak, some funky cheese, but the sour cherry is huge. Good gourd, taste is amplified smell. So much sour cherry, rich red vinuous-ness, so balanced though. Not whiplash inducing tartness, but definitely there. Damn its just such a delightful sour, with huge oaky and red cherry flavours to really round it out with the funk. No alcohol in the taste whatsoever.
