COMMERCIAL DESCRIPTION
Each time we make this ale we pick a different single variety of hops and use them exclusively in the brew. The malt bill stays fairly consistent from batch to batch so as to allow the distinctive hop flavors to come through. Here are just a few of the hops used in the past: Simcoe, Vanguard, Sterling, YCR-004, Amarillo, Satus, Santium, Tomahawk, and Columbus. Available on draft seasonally.O.G.: 1.060;50 BUíS

This one was was on draft at the brewpub with the Sterling hops and listed at 5.80% ABV on the board. I had a draft pour and likec it so well I took home a growler. It poured a nice golden color with a good white head and lots of lacing. Nose is citrus and pine hop odors, so even though there is only one hop variety, this hop has multiple aromas. The mouthfeel was slick and creamy. Flavor is very classic IPA with some bitterness. Shows you donít have to pack a beer with dozen different hops to make it taste good. Bitter finish. Simply a very drinkable and enjoyable brew.

On draft at the brewpub. Galaxy hops, if I recall correctly. Golden pour with a white head. Aroma of pine, orange peel, and citrus. Some pineapple and mango. Flavor is quite bitter, fruity and nice. Medium bodied, lively carbonation, Crisp bitter finish. Pretty cool, bro.

(Draft: OíBrienís in San Diego, CA) The flavor is hoppy and moderately bitter, but with very little malt for balance, but I suppose that is intentional to showcase the hops. The light malt flavor is grainy, but I couldnít taste it until I took a big mouthful. The finish is quite bitter. With the light malt presence, the light to medium body isnít surprising, but the beer does seems a bit flat to me. Fresh hops nose is very nice. Medium gold in color and slightly hazy, but the beer looks totally still. White head pours to a quarter-inch in height and slowly fades to a sheen, leaving some patchy lacing here and there. Itís an okay beer, and I understand what Vinnie is doing here, but Iím not a fan of purely hoppy beers.

Tap at the brewpub: (Sterling was used at the time of my visit) Light yellow golden pour with a dense white film. Soft citrus hop aroma. Twiggy, clean with some hay notes. Creamy body. Balanced flavor with some mild nutty malt undertones that mesh with a clean hoppy flavor. Mildly resiny with a tannic AA finish. A nice session (that tasted like it had no hops in it after PTE)

On tap at the brewpub. I didnít hear very many good things about this one, so I only ordered a sample. I wish I could have had more because it was darn good! Light golden yellow with a white head. The aroma was floral and citrusy with hints of tropical fruit. The flavor was the same. Very fresh and hop forward. It may suffer a bit next to Pliny and Blind Pig or even Row 2, but it was a very nice, light hop forward beer.

On tap @ RR! 14 karat pour with a small ivory crown. Grapefruit pith, mango, papaya, and guava all present themselves in the nose and on the palate. Well crafted but not robust. Lots of subtleties that make it a cut above other single-hop beers Iíve had before but still not terrible complex. Glad I had a chance to try this!

On tap @ the brewpub. Been looking forward to this for a while--Sterling hops have intrigued me since I had Valley Brewís Pils, and they used Sterling here as well. Clear pale orange amber with a creamy one finger eggshell head, fading to a clinging thick ring and thick film. Big fresh floral nose with some earthy bitterness and a pale malt background. Flavor has a fair amount more earthy bitterness than Iíd expected, and the flowers are toned back a little in the flavor. Bitterness peaked around a 4 when it did eventually finish, which was dry. Medium body with low prickly carbonation, yet still came across as smooth. Nice tattered lacing. For being a single hop beer, I like it. If nothing else, itís a nice education tool for what the hell a Sterling hop is. The chalkboard lists this batch @ 5.80% ABV.

Tap, 2013, experimental hop #462. Pours ultra clear amber orange, small beige head, great lacing. Aroma is light, piney, caramel. Flavor is about the same, light sweet and light bitter, but the finish has medium bitterness and a bit of a metallic note. Light body. Meh.

On tap at RR, this is the Sterling version. Pours a light gold with a thick white head. Aroma is light smooth hop aroma, a little orange. Taste is smooth crisp malt, a little grassy and not spicy or over the top. A very mellow hop variety that makes a unique ipa.

Tap @ Catos in Oakland. A godlen color with a white head. I initially tried this after taking in a sip of Pliny the Younger and thought this was water. After a little time and cleaning the palate, the hops came through. Not a strong PA but easy to drink and enjoyable. A little thin with a dry grainy malt finish on the palate.
