COMMERCIAL DESCRIPTION
Who’s afraid of the "big bad BRETT?" We’ll tell you who: winemakers! Because of our close proximity to several hundred wineries, we often get winemakers visiting our brewery. (After all, it takes a lot of great beer to make great wine!) Because we use 100% Brettanomyces yeast to ferment Sanctification, most winemakers will only smell the glass, and only a very few will venture to taste the beer. They think the Brettanomyces will attach to their clothing and end up in their winery. A simple solution was offered: keep a smudge pot burning at the door of our brewery so they can burn their clothes when exiting, but even that was not enough. After giving it more thought, we concluded that winemakers think Brettanomyces might scar their taste buds and possible even permeate their skin? Either way, Sanctification is one of the most unique beers you will ever taste! It was fermented with 100% Brettanomyces, rather than the traditional Saccharomyces.

bottle at the Trout Club- pours clear pale straw with brief, white head that settles to a small bubble ring. N- sour apple, distinct Brett, cedar T- lemon zest, grain, tart sourness. A real champagne texture with somewhat rich tones. Dry finish. Really solid.

Had on tap at brewery. Pours golden with a grape wine nose. Very tart and sour taste. A bit lighter than I thought. Good beer.

Batch005. Pours hazy dull yellow with a small off-white head. Smell is sour and fruity. The taste is tart fruit which is mildly sour ending dry and crisp. Light body with soft carbonation.

12 oz bottle. Not counting a couple of collaboration beers, this is my first R. River - too bad it has to be a Brett beer. I have a very limited tolerance for Brett. With that in mind: Pours light amber, hazy, with a small head. The aroma bodes poorly: Brett/ wild ale with some vinegar. Intimidating. Given that, the taste was a bit better but still too funky. Nicely sour with a hint of old bread. Fine medium-light feel.

Bottle. Crystal clear, deep yellow colour, with a thick foamy white head. A very attractive beer. Nose has a lot of bret complexity; cherry, foot, band-aid. Taste is crisp and sour, with a slightly astringent bitter finish. Light body and fairly high carbonation carries the flavour perfectly.

375 ml bottle received in trade. Thank you Aaron! Pours hazy pale golden with a frothy and fizzy white head that is rather slow to dissipate while leaving some thick lacing and trace on the glass. Smell is fruity and funky with crackers, pineapple slices in syrup, canned mandarin oranges, dry soil, brett, peaches, apricots, mango, papaya, starfruit, pink grapefruit juice and hints of barnyard, white bread and tropical fruit hard candy. Taste is sour and slightly fruity with crackers, pineapple, dry wood, leather, lemon zest, dry soil, lime juice, papaya, passionfruit, pink grapefruit juice, barnyard, unripe currants, unripe gooseberries and hints of horse blanket. Mouthfeel is tart, dry, tiny mouthpuckering, tiny astringent and light bodied. Finish is sour and tart with lemon juice, lime juice, pink grapefruit juice, crackers, hay, barnyard, passionfruit, red currants, gooseberries and lemon zest. Simple and delicious...

Sampled at DLD 2013. It poured a slightly hazy golden color with a large white head. The aroma was bretty in a big way; with bubblegum, lemon rind and some dusty old books. The taste was nice and the mouth-puckering sour and it finished dry. This was awesome.

From bottle at HOTB. Mild tart nose with good Brett notes, yeasty and aromatic. Pale golden hazy with thin white lacing head. Medium body with medium-high carbonation. Starts and stays sour with tons of Brett and sour-funky notes. Carbonic acidity, with sour and Bretty finish. Nice one.

Draft and bottle, 16 Tons Taphouse. Pours a luminous cloud golden color, lots of head. Big, big brett aroma, also a good bit of barrels. Body quite lively, finish brett again. A remarkable beer, front to back.

Goblet of 2011 vintage from brouwers cafe, seattle WA. Faintly cloudy orangey tan with some white dishsuds-looking head on top. Aromas of wheaty cherries and bretty tartness, slightly milky too as it warmed. AA little tingly on the mouthfeel from the sourness. Mostly dry finish in the throat, reisling-like. Slick tongue though, very good palate overall. Very light, pretty sour lemony with some rosemary or verbena and cherry. Brett-y/rye malt like quality in the perfect amount. Glad I made up my mind as the keg blew within 20 minutes.

375ml bottle, Batch 11/28/2012, from Old Philly Ale House. Pours hazy peach color with a medium foamy white head with terrific lacing. Aroma of white wine, white grapes, brett, and citrus; kind of a subtle vinous funkiness. Taste is a perfectly balanced sour, with notes of citrus and white grape. Medium carbonation. Complex yet simple, funky and sour, well balanced and extremely refreshing. Finishes incredibly smooth. Really, really nice, I could drink this all day...
