Who’s afraid of the "big bad BRETT?" We’ll tell you who: winemakers! Because of our close proximity to several hundred wineries, we often get winemakers visiting our brewery. (After all, it takes a lot of great beer to make great wine!) Because we use 100% Brettanomyces yeast to ferment Sanctification, most winemakers will only smell the glass, and only a very few will venture to taste the beer. They think the Brettanomyces will attach to their clothing and end up in their winery. A simple solution was offered: keep a smudge pot burning at the door of our brewery so they can burn their clothes when exiting, but even that was not enough. After giving it more thought, we concluded that winemakers think Brettanomyces might scar their taste buds and possible even permeate their skin? Either way, Sanctification is one of the most unique beers you will ever taste! It was fermented with 100% Brettanomyces, rather than the traditional Saccharomyces.

Clear medium yellow colour with a average to large, frothy, good lacing, mostly to fully lasting, white head. Aroma is light malty, moderate to light heavy, fruity, apricot, baking yeast, barnyard, pickles - pickled cucumbers, white wine notes. Flavour is moderate to light light heavy sweet and light acidic with a average to long duration, fruity, baking yeast, dry, white wine. Body is medium, texture is oily to watery, carbonation is flat. IMO: Not as complex a belgium sour. [20120127]

22 fl oz bottle, courtesy of Theis. Pours hazy yellow to orange with a huge, slowly collapsing white head. Dry wooden and mild orange fruity to citric aroma. Citric and sour initial flavoured with a mild hoppy fruity accent. Smooth and fruity flavoured into a mild malty finish. Surprisingly quickly declining sourness. Ends malty and slight milky, yet without any sourness bite. Good balance between the malt base of the beer and the sourness.

UPDATED: JUL 16, 2005 [Original botteling] An unclear pale yellow beer with a huge white head. The aroma is very spicy with notes of coriander, peaches and yeast. The flavor is great wheaty combined with notes of oranges leading to a dry hoppy finish.

Bottled. Hazy yellow coloured with a huge white head. Aroma of fruits with notes of pine needles and hops. Acidic flavour of pine apples, pine needles and grape fruit. Hoppy finish.

Bottled. Pale hazy orange colour, not much head. Nice semi-Cantillonish fruity nose, a.k.a. extreme sourness. Flavour is very sour fruits and Cantillonish. Gets a bit sweeter in the finish. Aftertaste is slight caramel with big hoppy sour overtone. Very pleasant!

Medium body, a subtle tartness but still you can feel the yeasty Belgian base beer underneath. Tartness grows as you dig into into this beer, still salty. Citrusy. Quite sessionable. 030711

(Bottle 65 cl) Hazy, pale golden with a very fine, creamy head. Sourish nose, fresh and citrusy. Quite light-bodied, sourness in the flavours also. Distinct Brett character - like a light version of Gueuze Very fresh and quenching. 6/3/7/4/14=3.4 170705

[Bottled at Stockholm Beer Festival] Pale yellow, small head. Citric barnyardy nose. Crisp and light, fresh and sour with lively mouthfeel. Lambic-like and lemony. Complex, yet very drinkable. Simply irresistable!

Bottle. Rating #5300. Pours a slightly hazy yellow color with a small off-white head. Has a sour tart citrus aroma. Slightly sweetish yet sour tart citrus flavor with some funky hints. Has a sweetish fruity sour tart finish with hints of citrus.
