Whos afraid of the "big bad BRETT?" Well tell you who: winemakers! Because of our close proximity to several hundred wineries, we often get winemakers visiting our brewery. (After all, it takes a lot of great beer to make great wine!) Because we use 100% Brettanomyces yeast to ferment Sanctification, most winemakers will only smell the glass, and only a very few will venture to taste the beer. They think the Brettanomyces will attach to their clothing and end up in their winery. A simple solution was offered: keep a smudge pot burning at the door of our brewery so they can burn their clothes when exiting, but even that was not enough. After giving it more thought, we concluded that winemakers think Brettanomyces might scar their taste buds and possible even permeate their skin? Either way, Sanctification is one of the most unique beers you will ever taste! It was fermented with 100% Brettanomyces, rather than the traditional Saccharomyces.

[bottle, shared with DarkMagus] Pours a hazy orange/yellow color, with a thick layer of dense foam. Aroma is loads of bacteria and funk. Musty brett flavors really dominate, but also provide some really nice, strong pineapple/mango fruit esters. Finishes extremely dry, making you crave another sip. Overall, this beer is wonderful. Definitely a memorable experience.

Old Rating - Golden hazy pour. Funk and lemon in the nose. Taste had beautiful sour balance, brett funk, cherry, lemon. Crisp, dry finish, and light.

Bottle. Unsure of age. Pours hazy yellow/gold with creamy white head. Aroma is funk, more funk, basement, gym mat, hay, lemon. Taste combines those aromas. Lemon/funk coming through loud and clear. Some cab qualities. Not as tart on the finish as expected. I dig it!

Draft at brewery. Nose is lemon and a bit of hay with a tartness. Not quite in the gills tho. Pour is a hazy light gold with small white head that laces amazingly. Taste is nothing short of an amazingly well balanced sour. A light chest burn after a few sips but not overpowering. Really good.

Batch number 5. Hazy blonde pour with a white head. Aromas is slightly acidic with just the right amount of brett funk in it. I was expecting this one to be over the top funky but it is just fine. Flavor is brett, white wine, notes of peach. Slightly sweet at first but then a nice sourness. Very complex, and very tasty.

Bottle from tleaver33, split with my wife and a brother in law. Pours golden, small white head. Nose is funky, stone fruits. Taste is a sweet sad that turns puckering sour, peach fuzz, light acidic burn. Light body.

Poured from bottle into tulip: Pours golden hazy straw with a nice white head. Aroma is citrus, horse blanket, grass, and tart. Taste is very tart, grass, funk, but without that strange bitterness on the back end that I dont enjoy from brett beers. In fact, this is my favorite brett beer that Ive had I believe. Light to medium body, lots of flavor, not boozy or too funky, dry mouthfeel, its very nice.

Pours a slight hazy beautiful golden color with very little head. Aroma of tart tropical fruits. Pineapple, lemon, belgian yeast, and slight bready notes. Very dry and sour taste. Flavors of sour lemon, bitter apple, mixed with the slight funk you'd expect from a saison. Excellent beer. ---Rated via Beer Buddy for iPhone

Draft sampler pour at Face to Face Beerfest ( f2f.org ): lactic and sour cherries in the nose, sour cherry notes followed by brie; mouthfeel is prickly, then creamy (like 1 percent milk) then drying. Appears brassy & slightly cloudy. elegant and complex.
