COMMERCIAL DESCRIPTION
Who’s afraid of the "big bad BRETT?" We’ll tell you who: winemakers! Because of our close proximity to several hundred wineries, we often get winemakers visiting our brewery. (After all, it takes a lot of great beer to make great wine!) Because we use 100% Brettanomyces yeast to ferment Sanctification, most winemakers will only smell the glass, and only a very few will venture to taste the beer. They think the Brettanomyces will attach to their clothing and end up in their winery. A simple solution was offered: keep a smudge pot burning at the door of our brewery so they can burn their clothes when exiting, but even that was not enough. After giving it more thought, we concluded that winemakers think Brettanomyces might scar their taste buds and possible even permeate their skin? Either way, Sanctification is one of the most unique beers you will ever taste! It was fermented with 100% Brettanomyces, rather than the traditional Saccharomyces.

Tap at the source. Clear yellow, medium white head. Aroma of white pepper and malt. Taste is slightly bitter, slightly sour, with orange peel and clove; fry finish. Nice.

Full pour at the brewpub. Cloudy gold pour with thin bubbly white head. Aroma is bretty, fruity, peachy, light white wine notes. Taste is tart, oaky, winey. Palate is light bodied with soft carbonation. Great.

Draft sample at the brewpub, Santa Rosa. Pale yellow straw coloured pour with fine sticky white head. Aroma is nice sharp citrus lemon, pineapple Brett funk. Flavour is complex tangy citrus and lemon, bretty funk, hint of pineapple. Tangy citrus, hint of sharp lemon rind. Palate is light and frothy, moderate carbonation, spicy dry finish.

Pours light pale yellow, cloudy, thin film of foam. Aroma is yeasty, feels saisony but also soft and fruity-creamy. Taste is sour with barnyard and berries. Bit of bitterness and that is left also later and keeps lingering. Dry and tingling the roof of my mouth. Combined with fruitiness and subtle sour, this one is really multy-layered and actually keeps growing on me. Solid.

bottled on June 2015, surprisingly smooth even though it’s only been aged for 6 months. I am really loving this; pours pale yellow with white head, it has aroma of clove and dough. the flavor is a blend of citrus and cheese; it’s very delicious and well balanced.

Tap at russian river, santa rosa. Hazy yellow color, white head. Aroma has sweet malts, citrus, raisins, some yeast. Nice sour taste, lemons, wheaty notes, some berries also.

Bottle. Golden with white head. Hums of brett unsurprisingly, pineapple, lemon, dust, earth. Taste is sharp, lemon and pineapple, brett. Bone dry and quite refreshing. Decent.

Pours a hazy golden yellow on tap with big fluffy white head that dissipates slowly to leave good lace. Aroma of funky gym socks, barnyard hay, and sweet citrus. Taste is more toward the citrus and funk. Just plain amazing, funking awesome.

Tap poured hazy lemon yellow with a fizzy head and sticky lacing. Aromas of sour balls, wheat, and lemon. Flavor is tart.
