Who’s afraid of the "big bad BRETT?" We’ll tell you who: winemakers! Because of our close proximity to several hundred wineries, we often get winemakers visiting our brewery. (After all, it takes a lot of great beer to make great wine!) Because we use 100% Brettanomyces yeast to ferment Sanctification, most winemakers will only smell the glass, and only a very few will venture to taste the beer. They think the Brettanomyces will attach to their clothing and end up in their winery. A simple solution was offered: keep a smudge pot burning at the door of our brewery so they can burn their clothes when exiting, but even that was not enough. After giving it more thought, we concluded that winemakers think Brettanomyces might scar their taste buds and possible even permeate their skin? Either way, Sanctification is one of the most unique beers you will ever taste! It was fermented with 100% Brettanomyces, rather than the traditional Saccharomyces.

375mL bottle consumed 1-25-13. Batch 006 A: Pilsner type clear gold. Foam vanishes. Bubbles lift and push the liquid. N: drying brettanomyces. Lemon and biscuit. Clementine orange. Some sourness is evident. Bleu cheese for sure. T: Very dry and musty. Lemon juice, horse blanket, and tons of brett. Sour vinous chardonnay grapes. Very floral; hints of standing in a field. Oats and granola. This is extremely complex at this age - hits all parts of the tongue. Sulfuric acid/fatali peppers. M: Crisp, dry and light, but it’s not refreshing. No, no, definitely not the last part. O: This is crazy infected and it adds brilliant character to the beer. Almost becomes too much, but I finished the entire bottle and wanted more. Get some.

375ml bottle enjoyed @ home. Pours unclear yellow with a white head. Aroma is funky, apples, a little barnyard, hay and citrus. Medium sour and a little salty. Medium bodied, average carbonation. Finish is crispy, citric and funky.

Funky wild yeast specific aroma. Taste is very balanced, sour but not quite in the lambic territory. Although there are no fruits added, it makes you think of white grapes, white gooseberries, white mirabelle plums. Overall this is an excellent sour, very balanced and easy drinking.

Sampler at the brewpub in Santa Rosa. Hazy yellow color with all white head. White-winey, apples, good funk, even a bit barnyard. Light apples, funk, citric, spicy, a bit herbal. But it all stays smooth and light and easy to drink. Amazing how a beer can be this complex, light and easy-to-drink at the same time!

Nicely carbonated not too fizzy but just enough for small white head and the best part to bring out the horse barn and hay roll out. Some slight Belgian ripe tart Apple. Flavor of a super well balance of lemon tart and goat cheese and plain sour yogurt. Awesome brew!

Bottle at home, thanks Lenner! Cloudy golden with white head. Aroma very bretty, clear Orval notes, lemon, orange peel and dusty wheat notes. Taste is similar but more mellow and balanced Orval notes, brett, barn, farmyard, lemon peel, orange. Nice

Citrus and sour. Some wine, lots of Brett character of hay and funk. Finishes extremely dry which add the the experience. I could drink this on a hot day all day long due to the wonderful lemon zest and citrus sour notes.

Refreshing, lemony, citrus and earthy, nice tang to it. It’s a bit one sided, and not very complex but a very refreshing beer none-the-less.

12.7oz bottle, thanks to aabean. Bottled 05/30/14. Mostly clear golden color, with some hazy and pale chunks in the end of the pour. Some airy white head. Some dots and bits of lace. Nice bigger sour taste, very light sweet, more dry. Nice oaky and lemony aroma. Some white grape. Mld belgian type yeast. Medium-plus body, lighter kind of soft carbonation. Very pleasant sour golden ale. A white wine drinker would probably enjoy particularly enjoy this.

Bottle: Thanks, Jeff. Hazy golden color, translucent with a soapy, foamy white head. Mild lacing. Aroma is funky as hell, much expected for a 100% Brett beer. Musty cellar floor, old cork, wood, dusty hay, cobwebs, mild green apple tartness, a hint of sweet lemon, moldy cotton. Flavor is more sour than funky, a reversal of the aroma. Green apple, tons of white grape, overly ripe & sour pear skins. Wow. Puckering. Still a huge, funky back-end with tons of wet oak, cork, basement floor, musty barnyard. A hint of biscuit in the periphery. Dry finish of wood, hay, & sour stone fruit. Awesome.
