COMMERCIAL DESCRIPTION
The color is deep amber with a light, creamy head. The nose starts off with a touch of citrus but then turns decidedly into peaches. The taste starts off with creamy malt resulting from the pale 2 row and caramel malts and Saint Arnold yeast. The hop bitter starts low then builds to a crescendo, but always maintains a balance even in its big finish. The hop flavor continues to be peaches, an interesting manifestation of the Columbus, Simcoe and Centennial hops. This is the first Divine Reserve that we have filtered. This decision was made to make the hop flavors brighter, plus it would have been a bottling nightmare with all the hop bits in it. This beer is best enjoyed at 45° or even a little warmer. Though the recipe and style indicate this beer to be enjoyed fresh, we expect this beer to develop interestingly over the years.

UPDATED: APR 1, 2011 Started out great, nice sweet/hoppy aroma, slightly sweet taste with nice hop / malt / grapefruit balance given its DIPA nature, but all the flavor seemed to fall flat after the 4th or 5th sip. Good effort as a DIPA but does not belong in the ranks of the legendaries. Was really hoping this would be one of the first truly great DIPAs out of TX, maybe my expectations were simply too high...

Bottle from LeopoldStoch. Pours a clear, golden brown color with white head. The aroma has pine and citrus notes as well as a hint of caramel. The taste has a malt sweetness to it and then hits you with a piney, floral hop flavor. It isn’t as crisp on the finish as a west coast IPA. There is a lingering bitterness with it that is different but not necessarily bad, kind of reminds me of dandelions. Better then Divine Reserve I have had in the past but not something I would seek out.

Sweet aroma of citrus fruits, sweet malts, piney hops, and a little boozy heat. Flavor of citrus fruits, pineapple, sweet malts, grassy hops, and pine resin. Medium-bodied, with moderate carbonation and a juicy mouthfeel that finishes resinous and sticky. Solid DIPA.

Bottle:   Amberish, fairly clear, large frothy off-white head, nice lacing.   Certainly a hoppy nose, seems like lots of different varieties.   Oddly enough I am getting onion & chive potato chips plus some dull fruitiness on the nose.   Strange spicing for that tater chip aroma, but thats what I get.   Bitterness is a little muted, albeit still a bit sharp but fleeting.   Mild sweetness, a little citrusy, and some sweet onion like spiciness.   Moderate to full body and mouthfeel.   The 8.9% ABV is well hidden.   Very minor warming, and when I say minor I mean minor.   Not a lot of floralness in this one, citrusy with some interesting spices.   Enjoyable, even if a little different and unexpected.   Thanks to mora2000 for the bottle!
