COMMERCIAL DESCRIPTION
Saison Athene is a bottle conditioned saison brewed with chamomile, fresh rosemary and black pepper. A dose of wild yeast at bottling adds to the complexity.

Bottle: Opaque, murky dark shade of gold with orange around the edges. Volatile, large foamy white head puffs up quite largely upon pouring. Belgian yeast aroma; lots of clove & bubblegum. Underlying zesty spices, white pepper, earthy esters, a touch of toast, some minerals. Slightly phenolic. Crisp flavor, lighter than the aroma would make it seem. Lemon zest, clove, apple skins, tart pear. Lightly herbal, underlying hop bitterness for balance with a strong funky finish. Cork, must, faint barnyard. A hint of menthol-like mint in the finish with a touch of alcohol. Decent stuff. Didn’t blow me away, but it wasn’t bad at all.

??? - Herbal hay and horse blanket. Cloudy yellow with a rich white head. Herbal notes, hay, grain and a little bitterness. Lots of hay in the finish. Nice.

750 ml bottle purchased at Total Wine, Tampa. Cloudy / hazy gold in a chalice. Aroma is all Belgian yeast, spicy, floral hop hints. Flavor carries over the floral character with the pepper in chamomile shows in the back end of he sip. Lively palate with the ABV not found anyplace. Rather nice drink.

Pineapple yellow color. Impeccably cloudy. Aroma is sharp sourness: half vinegar, half lemony tartness. Scent is not for everyone, but a touch of blood orange rind balances it beautifully. Has a prickly spice. The taste is very tart, a prickly, spicy effervescent sourness. Less vinegar in the taste, but still extremely sour, like a lime. Has a lot of the qualities of a mimosa. The feel is spiky and juicy, balanced and pretty intense. This is a really terrific beer. It really is a mimosa for those that don’t drink mimosas.

One of the best saisons I’ve ever had. The interesting additions of rosemary and chamomile give a lovely twist, almost soothing like a nighttime tea. Quite a bit of farmhouse fun to it as well. I get a pineapple like flavor upfront, but finishes smooth and refreshing.

From notes. Tasted some time near the summer of 2012 from a capped 750mL corked and caged bottle. Pours dark yellow with a thick white head that slowly recedes to a thin layer of smooth lace. The nose is cardamom and herbal spice with some dark bread, caramel, and light funk. The flavor is more spice, less malt, and the same very light hint of funk. The body is medium with overactive carbonation and a long spiced cardamom finish.

Clear straw golden with a small white head, no lacing. Aroma of pit fruit and peaches. Taste is fruity and black pepper
