4.1 AROMA 7/10 APPEARANCE 5/5 TASTE 8/10 PALATE 5/5 OVERALL 16/20
Aroma slightly toffee, almost savoury. Appearance is a beautiful fawn/tan head on a red-brown coloured beer, excellent to look at. Taste starts with a touch of caramel or toffee that quickly changes to a sweet celery flavour that is interesting but very welcome (an intriguing combination of hops I'm guessing), capped with hints of liquorice. Palate is very long, warm, with tingles o bitterness all over, nothing but very pleasant! Great!
Overall, a unique and delicious beer.

3.6 AROMA 7/10 APPEARANCE 3/5 TASTE 6/10 PALATE 3/5 OVERALL 17/20
UPDATED: DEC 3, 2013 75cl bottle. Dark brown/red with tanned, thick head.
NOSE : what a beautiful smell. Strong spiced bread and toffee aromas, sweet cheese, nuts, very pleasant flower aromas (mostly elderberry flowers), vanilla, pineapple and coco.
SIP : medium density body with oily texture and decent carbonation. Sweet with distinctive gingerbread flavor. Toffee and vanilla in the background. It evolves mixing subtile but very complex flower and yeast aromas creating a delicate lactic and lightly sour hints. Those are well incorporated in this huge gingerbread "concept". Gets earthy and dry only in the finish but still covered by very potent aromas of toffee and flowers. Burned flavors of malts resemble obviously to a freshly brewed coffee with milk and sugar.
OVERALL : oh it’s really delicious. It touches exactly where delicious is in my world. It mixes well the dark malt combo with an exquisite hop character and it makes a very well balanced winter brew. With this beer I start to get what a winter beer should be about : going of balance into what you consider the most delicious. In this case, this brew is what I would call Christmas.
