Cloudy copper body with a thin white head. No lacing.
Ginger, sweet malt and pepper in the aroma. Somewhat of a wet, earthy smell.
Sour fruit. Pepper, orange peel and I guess maybe lichen(?) in the middle. Nice wheat bite in the end.
Full bodied with a tart finish.

UPDATED: MAY 25, 2005 1997 750mL. Pours a very rosy orange. Light yellows and almost a pink hue to it. Good amount of sediment. Fleeting white head, lots of lacing. Aroma of cheese, cheese and more cheese. Wow, is this beer brewed with blue cheese??? Amazing. Very funky, lots of serious yeast, blue cheese, bacteria (which creates the cheesy smell), and some very faint ripe fruit notes. Flavor is heavily funky, more cheese, no trace of the hallertauers, dont taste the ginger either. Has a soft, round body, medium and somewhat oxidized. Very good for being this old though. Balance is wonderful. Tends to the sweet side, but not overly so, with a drier yeast flavor coming on in the finish. A bit of residual spice is felt, though it has dulled out quite a bit I would imagine. Wonderful and different. I will be buying the 96 vintage next time I go shopping. 9/5/8/5/18
1995 750mL Glad I got to try this, as I will have had the 95 and 97 with the 96 in my cellar. All of the sour, spoiled fruits and funky, acidic lactobacillus, heavily aged hops and tart citrus in the nose. Flavor is full of cheese, musty barnyard notes, old sour oranges, spoiled grapefruits, more rhubarb and light cider. For a 10 year old beer, this stuff is remarkable. Medium body, good amount of oxiadation, but not overly so/more than expected. Very soft carbonation, but it is still present. Oily mouthfeel. I think, for my tastes, that I preferred this stuff 6 years old instead of 10, but it is still fantastic, IMHO. 8/5/8/4/17. Score is an average of the two years.

Amber coloured with slim off-white head. Peppery and fruity aroma. Great complex sour taste, with citrus, yeast and spices. Refreshing, thirst quenching, drinkable. Excellent.

UPDATED: AUG 7, 2005 Vintage 1995. Ambrée tirant vers l’orangée, pas de mousse, pas de dégagement gazeux lors du service. Aromes s’apparentant étrangement à certaines gueuze / Lambic. Pleins de caractéristiques sauvages, tartrique, brett, acide, citronnée. En bouche, boisé, acide, tartrique, très sèche et pleinement surette. Très authentique et probablement bien représentative des saisons d’autrefois. A très bien survécu son temps en bouteille. Quelle belle découverte!

2005 RBSG Montreal Friday Night Tasting. 1995 bottle. Hazy golden colour with a thin frothy off-white foam. Tart, citric, yeasty, fruity, and light barnyard aroma. Acetic and lactic tartness, lightly yeasty, with a dry dusty bitter finish. Light bodied, dry, but very refreshing. Nice start to the night...

Hazy amber/copper. Large, dense, frothy, off white head. Sharp grainy, herbal nose, identifiable anise, the rest blend togerther as generic "spice." Some funk in there also. Aroma really opening up as it warms. Ginger, pepper, and sourness all showing up now. All the same flavors on top of some soft, lightly sweet malt. Sourness steps it up a notch or two. Some definite citrus tree character. Fresh bitter notes. Finishes dry, sour, musty. Medium/full body, smooth. Excellent saison, complex and easy to drink.

750 Bottle at 55 F out of Westmalle Glass Got from Brusin’ Ales Appearance is a Dark golden hue ~7 SRM unfiltered and cloudy with a white durant rocky head. Aromas of boysenberry, honey, Spicy, apple cider. Apples marry the back of the tongue with oak, apple cider, star anise, cloves, cinammon, ginger bites, sweet orange peel. backdrop of dry sour spicy orange peel and like all vapeur Ales, That ever present 30 second after swallow tribute to Black pepper the middle of the tongue (Complex and nice) fades in. This was originally the intended flagship of Jean Louis Diet all though Conchone with it’s sexy label accounts for 70 % of the total production. HIGHLY Recommended

Finally, I’m rating this great beer that I’ve enjoyed often. Pours an effervescent light amber color with a small tan head that diminishes quickly. Big apple, toffee overtones, barnyard funk, and hints of orange zest in the nose. Tan lacing craves to conjoin, but ends up giving in to gravity. My taste buds flare up when this brew hits; granted, I have been fasting again today, so my mouth may be in shock. Flavors include more apple, caramel, very subtle ginger, more funky yeast than the aroma. Medium/full carbonation and body. Well-balanced flavor and mouthfeel. I never tire of this beer, even when I’m swallowing pieces of cork that are floating around.

Pour moi le mélange d’épices très bien choisi, le goût acidulé complexe qui rappelle les meilleures gueuzes, la complexité des arômes et le goût d’ensemble font de cette bière une des meilleures que je connaisse.

Pours a golden-brown with a fizzy head. The aroma is a lot of fun... plenty of ginger and fruit, especially orange peel. The flavor didn’t quite deliver, but it certainly didn’t disappoint... very spicy and tart, but with sufficient wetness and mouthfeel to satisfy me. A nice, refreshing summer ale.
