UPDATED: APR 15, 2008 37.5cl bottle: Brilliant, crisp gold color with white, lareg-bubbled head that doesn’t stay around too long. First aroma is of skunk but it quickly blows away leading to a nice earthy and musty cellar aroma wit cork and vinous characters. Slight rubber or band-aid but not to an off-putting degree. When this lively liquid hits the mouth and flows over the tongue, you feel that the beer is going to be slightly sweet, but this is kicked out of your mind with a nice bitter twang. Some pineapple, citrus, pepper, bitter orange peel, and a sharp raw wheat, followed by a little malt and a lightly metallic sourness. A very nice dry warm weather beer!

Bottle Blond, yellow body. Off-white rocky to frothy head. Aroma of oranges, hops, flowers, ... Soft, well balanced aroma. Moderately, lightly bitter flavour: very nice with a pleasant feel. Well balanced flavour! Nice saison.

0.375 bottle. Golden color with creamy head and lots of floating particles. Sweetish, perfumy, honeyish, peppery and clovey aroma with cork and tropical fruits in the background. Dryer flavor with woody, grainy, peppery, herbal, nutty, oily and orangey notes. Dry, peppery and woody finish. Truly artisanal and original beer!

2005 Bottle. Beautiful hazy pour with a big head that took me the better part of 10 minutes to pour 2 glasses. Aroma is very yeasty, doughy, and smells faintly of orange peel. The yeast is really upfront, with a champagne like dry finish, peppery in the middle.

Bottle. Pours a hazy golden with a very large long lasting rocky white head that leaves good lacing. Aroma of yeast, cereal grains, and light citrus. Taste is the same as aroma but more pronounced. Medium thin mouthfeel that finishes very dry and slightly spicy. Very good.

750mL bottle, 6%ABV, Saison brewed with spelt. Very, very heady. aroma of lemon pledge and bready yeastiness flavors. Very balanced, medium dryness.

Appearance: Pours a clear, light yellow body with a pillowy white head.
Smell: Lightly grainy, floral, citrusy aroma Equally light, soft yeastiness.
Taste: Bright, tart lemon flavor with very little sweetness. Hint of hay. Light spiciness. Finishes dry and crisp with a mild herbaceousness to it.
Mouthfeel: Medium-thin body. Moderate carbonation.
Drinkability: Hmm. Maybe spelt has the inside track for comeback grain of the year!

1/19/05. 750ml. Belgianshop. Golden with massive rocky white head. Nice hoppy cirussy spice aroma. spicey taste. Sharp and tart with some funk. A little thin. still missing something.
