Great thin head of very fine bubbles. Wonderful carbonation that keeps it on top of the glass. Big aroma with citrus, yeast and a touch of wheat. Color is a very cloudy golden orange. Flavor is zesty with a slight alcohol tingle. A little fruit and yeast. Nothing very dominant. Finish is dry and clean. A good summertime brew that will be pretty refreshing

UPDATED: OCT 22, 2006 (Bottled, 0.75l, another re-rate) Hazy golden color with a huge, white, pillowy, ultra-lacy head. Yeasty, peppery, lemony, earthy aroma with birch leaf hints. Quite dry, quite bitter, slightly acidic flavor with lemony fruitiness. Long, lingering, dryish, bitter and peppery finish. Medium-bodied, quite carbonated but soft, refreshing and bitter palate. No sign of alcohol. A delicious, tasty and very well-balanced saison!
(Bottled, 0,33l, older re-rate, 7-4-8-3-15=3.7) Golden, hazy color, small head. Yeasty, fruity aroma - nice! Very fruity, slightly dry and sour, refreshing flavor. Soft, but foamy carbonation, medium-bodied palate. Alcohol not showing at all. Bitter, spicy finish.

Pretty good beer. Lots of flavors happening. Fruity and sour like. Perfect head. Sharp hop finish. Very interesting.

UPDATED: AUG 24, 2004 750 ml. Interesting, self removing cork. Perfect head that rivals the Trappist brews. Yellow and hazy with floaties. Musty, earthy, lemon, orange peel, grass, and hops all wrapped up in a neat aroma bundle. Smooth round malt with an orange peel bitterness. Sharp hop finish. Very interesting and complex beer.

UPDATED: JAN 4, 2014 750 ml bottle. Deep orange-gold pour with a thick fluffy white head. The aroma is great. Earthy and peppery with a touch of light spice and some savoury yeastiness. A bit chewy and a little bit of mint and spice. There is a touch of peppery character and some lingering earthy bitterness. Rustic and awesome.
From a 25cl bottle 04/2006. Cloudy golden orange beer with a huge white head and great lacing. Notes of citrus, sweet malt, apricot and raison. Some phenolic character. Taste is yeasty. I found my bottle to be a bit over-carbonated and a strange but very subtle metallic finish. Still a fantastic beer.

Bottle at the Swan and Rushes, Leicester. Fantastic, class beer. Superbly balanced - refreshing and full bodied. Fresh German wheat taste, with some fruit and Belgian style wit too. Dry, tart aroma, with some cider. Bright, pale orange appearance - cloudy and hazy. Slimline but persistent white fluffy head, with some gloopy lacing. Some dryness in the finish, crisply contrasting with previosu smooth fruit. Prickled top of mouth and left a lingering spicy tongue.

UPDATED: FEB 2, 2006 2003 bottle. Pale gold colour, clear with amazing fluffy white head. Aroma is yeasty and spicy and a little bit phenolic. Initial light-struck character dissipates quickly. After smelling it initially I didn’t think I’d like it much and the first taste didn’t impress me all that much either. But it really grew on me. Really quite dry and fizzy in the mouth, starts with a whisper of malt but then develops a dry, stony, soda water character then a light bitterness (kind of reminded me of Orval). I think I initially expected something a bit bigger and bolder and didn’t appreciate the subtlety of the beer (I would call it elegant) but I still can’t get past the feeling that it was just a touch watery.
RR: Geez it’s good to be able to get something like this in Australia now. Great combination of fresh, grassy, polystyreney (in a good way) hops and tropical fruit yeast notes. Great firm body with lean pils malt and assertive hop flavour and bitterness. Like it a lot.

The aroma is lemony, sharp, and musty all at the same time. It is very well carbonated and just dances around as it effervesces on my tongue. The taste is lightly sweet, yet is quite dry in the finish. This is definitely well hopped as it has a nice balancing bitterness in the finish. The taste has some light lemon notes as well hints of ginger, and herbs. The beer is really quite dry, despite the sweetness that I detected early on. This beer is light and refreshing, yet complex and interesting. This is just a great beer, and one of my favorite styles right now.
2003 bottle, Sampled January, 2004
It is very well carbonated as the cork just explodes from the bottle with only a little prompting. This beer is a hazy orange yellow colored brew, which, is topped by a prodigious white head. The head is long lasting and turns to a cratered rocky surface over time. As I pour I get a strong light struck character in the aroma. The main aroma in the glass is of grain. The light struck character is, thankfully, quite muted in the taste. The beer has a sharp grassy-grain character to it, which is quite good and make me think of a nice hay field in Belgium. There is a slight sweetness and a balancing bitter hop finish. It is a fairly dry beer overall, and has very little fruitiness to it. The middle of this beer has a certain sharp spiciness to it. Overall, though this beer is fairly mellow, the flavors are well integrated and flow one into the other. I like this beer; a quality, good farm-house beer.

went particularly well with eczematic's altbier-stewed moroccan lamb shanks. tinge of green, aroma of dandelions, sugar water and white grapes. oddly bitter - like lemon barley lollies in grapefruit juice. some black pepper, lime and dettol, just so much going on. here's hoping the yeast will make some good batches of home brew
