Pours a deep amber brown, mostly clear (almost like maple syrup or dark sweet tea), with a big, pillowy, off-white head. Aroma is estery with subtle hints of bubble gum, lots of fruit and spice character, some caramel and toffee, and a light peppery note. The flavor follows the aroma - lots of thick malts with some caramel taste, fruity and herbal esters and light hop flavor, a growing level of peppery phenols, and dark brown sugar with hints of maple and molasses. The finish has a nice dryness due to the phenols and dry texture. There is a light balancing bitterness in the end, too. The beer is slightly warming. The mouthfeel is spritzy and effervescent, and nicely lightens the full, slippery body. Overall, an interesting Belgian ale - tasty and good. Aroma is zesty spring lemon, sweet coriander, and tart peach. Flavor is sweet caramel soup with lemon and a tart grass finish. Thin mouthfeel but the flavor lingers. The head is frothy with some peaks and two fingers in size. Head duration is fully lasting with a slight cap on the beer to the very end. Aroma is mild with some slight fruit essence. Great version of an funky beer. Lovely cider-esque fruit, apple, yeast, bret. But with an nice malty edge not usually associated with Saison beer. Nice balance.
