Batch 2 Bottle 40 of 84 sampled 9/2009
Pours a slightly cloudy pale golden straw color with a huge fluffy white head that slowly dissipates to a cap on top.
Smells of light citrus, lemon and clove with a fleeting hint of banana. Slightly earthy and spicy aroma slightly tart with a hint of funk deep underneath. The taste is light and citrusy with an earthy edge. Smooth and medium body with a very dry finish.
I’m impressed that Bill managed to brew a Saison that I enjoyed so much. This is a great light easy drinking ale, there’s no way I’m going to be able to cellar the rest of these.

Bottle, wait why doesn’t this suck, thanks Eric for bringing this, and for once its sincere. Bottle. Pours a hazy orange body with a white head. Nice sweet citrus notes a hint of grass and some light bread y tones. A hint of tart cider like notes with a mild spicy tone. Its like the little engine started saying "i think i can." Cool, maybe ill tune in a little closer.

Reviewed from notes. Thanks to rpstevens for handing this over to me as an extra during an in-person trade at KTG 2010.
Pours a slightly hazed yellow golden color with a white head. The nose brings a good amount of grain as well as some earth and a bit of citrus. A bit of wheat. The taste brings some dry wheat as well as citrus and earth. Faint notes of light dough. Some nice yeast characteristics that lead to a fairly dry mouthfeel. Good carbonation levels. Somewhat plain, but a good tasting saison in the end.

Bottle at the hotel tasting after Night of the Barrels at EBF. Pours a lightly hazed orange with a thin white head. Musk, toast, and a nice little bit of funk on the nose. I don’t get it. This is not what I am accustomed to. There’s no horrible vegetal notes that make me want to vomit profusely, no cat piss, nothing that I’ve had in almost all of the other WB beers I’ve tried. This one’s pretty solid. Clean and crisp saison, nice musk notes. A touch of funk, and some bright citrus on the finish. If the quality control issues are gone and everything else starts coming out akin to this, maybe I’ll start willingly trying a few more WB beers.

Where the Wild Beers Are, 2010. Aroma has yeast and light spice. Flavor is citrus and dry with lots of yeast and oak. A very dry saison. Good.

Bomber; 11 months old: Cloudy straw yellow with a thin white head, aroma has lemons, hay and pepper, biting carbonation, starts and ends lightly bitter, with a slight sour note at the end.

Bottled, thanks Cletus! Cloudy pale golden, small airy head. Aroma of honey and boiled vegetables. Sweet with clean mouthfeel. Mushy and rathe simplistic with more syrup than crispness. Sadly also vegtable/honey flavours comes to dominate.
