I got the 12-pack last July and stashed it in the fridge with the idea of a video tasting comparing all six at once. Never got around to happening. Now itís 10 months later, and I finally decide to just do two at a time. Iím comparing this to the Simcoe, both poured in Sam Adams glasses. Pour: Kicks up more foam than the EKG did, more bubble action. Same amber color and floaties, hop bits or yeast sediment, Iím not sure. One I finally get all the bottle poured, I have rocky peaks over the glass edge. Aroma: At this age, I get of medicinal smell from oxidation, my fault for not getting around to it. But that increases the perception of alcohol. Some citrus and pear in the hops. Taste: Hops still prominent in the form of bitterness. Some pine resin notes. Fuller mouthfeel when tasted one after another. Though with a few more swigs, that thicker malt texture lightens up. Still, gotta say there are enough hops involved right to the end, although by now they give a definite impression of dried hops. But I shouldíve drunk these 9 months ago.

The Sampler, Brooklyn tap: Pours orange with a white head. Aroma is hefty pine and a lot of grapefruit. Definitely more bitter and punchy than the Mosaic. Hoppy bitterness and pine lingers for quite a bit. Works well with the substantial malt backbone. Pretty good. So it simcoes.

Bottle. Lightly catty grapefruit peel and caramel malt aroma. Golden yellow with nice head and lacing. Bitter lightly funky grapefruit peel and light biscuit malt flavor. Good - doesnít have much of the cattiness I usually get from Simcoe.

Bottle: Clear copper with a short, off-white head. Caramel, grapefruit scent, pine. Slightly bready malt, strong grapefruit-peel bittering. Very crisp feel, almost tingly...good solid hopping.

bottle. Poured clear, deep amber with a beige head. Citrusy hop aroma. Medium body, creamy cabonation, sticky dryness. Caramel malt flavour, spicy herbal hops with grapefruit, a bit resinous.

Cornfield (5552) - Oak Forest, Illinois, USA - OCT 20, 2014
With its light caramel body, this, of course, looks much like the other IPAs from this series, except that the head is more bubbly and sudsy rather than creamy. The aroma is yellow grapefruit, a pinch of zest, and a hint of pine. A soft cereal sweetness oozes out after a while. The malt is more prominent in the flavor - at first - but the hops, although not intense, soon dominate the taste. The bitterness is solid, but not overbearing (Damn!) and lasts long into the dry finish. I really like Simcoe hops.

Bottle at home. Pours clear dark amber with a medium, frothy off-white head, medium retention with good lacing. Aroma is earthy, pine and resin hops with tropical fruity notes, light cracker malt and pear esters. Flavor is moderate hops and medium bitterness, light malt and a dry finish. Medium body and carbonation.

I must be a huge fan of simcoe hops! Iíve sampled and tasted a few other simcoe-single-hop IPAs and Iíve liked every single one of them. This one from Sam Adams is no different. The beer poured a bright and clean gold color with a decent sized off-white head. The head left some nice lacing around the glass, as well. The body was soft, smooth and delicious, with lots of fruity and hop resin notes. I tasted a bit of grapefruit and pine and well.

Mm simcoe my favorite. Aroma is orange citrus and pine. Taste is slightly sweet offset by a citrus bitterness first followed by a pine resinous finish. Finished dry as well. ---Rated via Beer Buddy for iPhone

This is the best of the deconstructed bunch. A nice piney hop presence that leaves a lingering bitterness and spice. Caramel malts profile nicely against the Simcoe.

"probably my 2nd favorite in the mixer, though i enjoyed them all. grapefruit dominated nose and flavor, but far from overbearing. the malts balance things well. great sessionable ipa.
