750ml. Tart and crisp. Lemons and Grammy smith apples. Darker than a sour brown. More of a sour black. Different roast than a red/brown. Unique and tasty.

Many thanks to Mike for the bottle! Partagée en compagnie d’Alexandre. Liquide très foncé de couleur de mûres et aux mêmes reflets violacés que l’on retrouve dans les vins rouges jeunes. Mousse quasi inexistante. Le liquide me paraît profond, très rond et presque sirupeux. Nez largement dominé par la barrique dans laquelle s’est développé une vive aigreur sauvage. Presque du vinaigre balsamique. Beaucoup de sucre et d’un funk qui dominent largement la faible torréfaction des grains qui ne fait ici pas le poids. Beaucoup de bulles me picotent la langue en bouche accompagnées de saveurs sirupeuses de fruits noirs ainsi que de vinaigre balsamique. Longue en bouche, la finale se joue sur une pointe d’amertume. Farmhouse? Really?

750 mL bottle shared by Doug with Chris, Ryan, and I. The pour is a darker medium brown with a nice reddish hue to it. There is a lighter tan head that fizzles down leaving a little lace. The aroma is full of dark fruits and a solid roastiness. There is a hint of malt, but it’s tart and crisp. Awesome sour brown. The flavor matches this. There is a lot of dark fruit and caramel malt shining bright. There is a strong roast on the back and and just the tart sourness that is well balanced. The mouth feel is a little thicker than I’d like with a soft, yet crisp carbonation. There is a tart roasty cherry aftertaste that just invites another drink. Damn do I love SARA beers!

Capped 750 from Capitol Beer in Sacramento, CA. Pours brown with a light tan head. Aroma is sort of BFM Bon Chien light. Med body at least. Flavor is BFM Bon Chien sort of 3/4. This is amazing. California meets Switzerland. What a great SR/B ale. Yummy!

Bottle from Final Gravity. Pours dark brown with a nice tan head and a marvelous sour brown aroma. There is a moderately sour dark malt flavor with a tart finish. Subtle and tasty with some nice bourbon.

Poured a medium brown with a ws Hite head. Aroma was of dark fruits and mineral character. Flavor similar, brett forward, funk and dark fruits. Decent.

Batch #3. Bouteille de 750 ml partagée lors d’une dégustation entre amis. Arôme: Odeur de petits fruits avec une pointe de vinaigre balsamique. Apparence: La couleur est noire. Présence d’un mince col beige mousseux et d’une fine dentelle sur le verre. Saveur: Goût de petits fruits et de céréales grillées avec une pointe de balsamique. Durée moyenne de l’arrière goût. Palette: Le corps est moyen avec une texture légèrement onctueuse. Moyenne effervescence en bouche. Arrière goût légèrement surette. (Rating #6849)

My Bottom Line:
Blackberry and black grape fruitiness accompanies roasted cereals into vinous acidity in this flavorful but mildly puzzling brew.

Further Personal Perceptions:
-A veil of foam covers the brown-hued black.
-The juxtaposition of overt roastiness and acetic acid takes some getting used to.
-The mouthfeel is on the dry side, with soft, natural carbonation.
-This was perfect for a pâté du Périgord.

Draft at the brewery. Pours an opaque coffee brown with some amber hints around the edges, with a small off-white head that settles into a ring while leaving streaks of lace in the glass. Chocolate and light rosted malts, plum, berries, oak, balsamic vinegar, and red grapes. Medium-bodied, with a tart, sweet, tangy, mildly roasty mouthfeel and moderate carbonation. Nice sour brown.
