Pours brilliant red. Aromas of an oaky raspberry bramble patch. Flavor is heavy on the oak up front, tannic with red wine like notes. Strong raspberry flavor. Jammy and red wine like. Very very impressed by this one.

another untraditional mead, this one treated in toasted oak and fermented with blackberries and maple syrup. dull brick red body with slow-crawling ropes. oak in the nose is extremely heavy and dominates the fainter honey and maple character. there’s a nice phenolic, nutty, woody and toasty quality, but the hot alcohols and excess oak keep this one from having any balance. thankfully the flavor is much more enjoyable than the nose, much cleaner, less phenolic, and provides a better taste of the maple syrup addition. still, strong oak tannins pretty much dominate here, and a thick, syrupy and oily body seems a little too much to handle.

Saphouse can really make some amazing meads. I dont claim to be a mead expert but man so much rich blackberry flavor and the barrel characteristic adds light roastyness. It reminds me of eating toast with blackberry jam. So good.
