A mix of pure Maple Syrup and Wildflower Honey. Smooth and rich without being overly sweet. Notes of flowers, apples and caramel play upon the palette. While the maple presents itself it provides a clean finish. Some prefer this mead chilled or on ice.

Bottle share at The Watford Non-Beer Tasting, thanks to Leighton. As Sap House Sugar Maple, 13.8%, wax neck, maple and honey blend ferment. Pale orange, clear, still, no real head. Aroma is plasticky, rubbery, booze. Body is oily with low carbonation. Taste follows aroma and is dry and gin-like, booze, plastic, waxy, resin. Interesting. A bit harsh really. (3.1)

33cl clear bottle shared at the Non-Beer Tasting @Fergus’, Watford. It pours a clean rich golden color with no head. Aroma is sweet with notes of baked apples, tropical fruit, bark, vanilla. Taste is also sweet with more notes of tropical fruits, vanilla, white chocolate and spiced rum. Medium to full bodied, oily, low carbonation. Overall, very nice

Bottle thanks to Leighton. It pours clear very pale gold with a tiny white head. The aroma is sweet, rich, fruity, honey, maple, apple, pear and earth. The taste is smooth, rich, tangy fruits, wood, earth, floral, oily, apple skin, wood and a touch of acidity even. Finish is rather warming. Interesting, but a bit rough around the edges.

Bottle shared at the Watford tasting, many thanks to Leighton for this one. A bright golden yellow coloured pour. Aroma is sugary maple, hot alcohol, earthy, floral honey. Flavour is composed of earthy honey, hint of woody maple, dry woody finish. Some hot alcohol in the finish. Palate is medium sweet. Slightly tangy, lowish carbonations,

Bottle shared in Watford - picked up in NH. Pours clear yellow-gold. Rich honey in the snout, light alcohol, florals, tangerine. Medium sweet flavour with definite alcohol boost, some lemony accents, moderate honey, some spicy notes, marmalade. Medium to full bodied, and lightly chewy. Warming finish, sweet but not syrupy, with more restrained honey, very faint smoke, tangerine. Interesting stuff. Not bad.

Split a 375ml. I think I bought this in Nov 2013. Poured a clear amber color, totally flat. Aroma was boozy honey. Lots of maple sugar notes. Flavor was light honey, boozy vanilla, maple. Very warming.

With a yellow color with the slightest brown tint. Still. The aroma is of sweet honey with a light maple character. The taste is mellow honey with a moderate maple presence. The finish is smooth and rich.

Clear amber pour. Apple and honey in the nose with maybe just a hint of maple. I would like to taste more of the honey and maple in this, but its like my mouth is full of black tea leaves and a very astringent finish.

Honey, apple, vanilla, maple, and some alcohol in the aroma. Caramel, vanilla, and maple in the flavor. Dry finish with some alcohol. Not as sweet as some meads. Tasty and drinkable.

Bottle from the wine cabinet - pours clear amber, still. Aroma is bourbon, brown sugar, maple, and booze. Gotta say, that straight from the fridge it was like mouth wash. I let it sit out for an hour, so the aroma could bloom. Much, much better when it just has a bit of a chill. Overall, solid, if safe offering. They could have pushed it more.
