I’m not sure where the smoke is coming from, but there are all sorts of phenols here. There’s even a little cheese. No carbonation. Aroma is sour apple, granny smith, vinegar, funk, and yeast. Flavor is vinegar, band-aid, apple, smoke, lacto, with some earthy cowpile-esqueness. Unique. Quite clear, pale yellow with slight induced fizz that fades quickly like a proseco. Aroma is mildly sulfurous, musty, and a touch acetic. Sprightly bodied stuff with brisk acidity and mild wet farmhouse funk. Sour and citrus filled cider with pleasant funk and some grassy and black peppercorn that I assume must come from yeasts? Fun stuff that is easily drinkable yet challenging as you might want to make it. Wish I had some salty and oily cheese and olives to pair this with, as that would probably work well. The taste is also sour with slight bacon notes around the edges. That’s interesting. It ends smooth even and refreshing with a hint or two of lime.
