COMMERCIAL DESCRIPTION
Schlafly’s first true Belgian style sour beer. This red Belgian Singel was aged in charred oak barrels for over 2 and a half years with Pediococcus, Lactobacillus and Brettanomyces. These bacteria and wild yeasts provide a nice sour and funky flavor giving us a very unique tasting beer.

Clear red pour. Very fast dissipating head. Aromas of apple vinegar and light bramble fruit. Taste is crisp, sweet, tart and finishes with a bit of acidity. Nice lingering finish on the tongue of raspberry and sugar.

Growler shared by phaleslu. Pours a hazy caramel brown color with a small off white film. The aroma has solvent (acetone), vinegar, lactic notes, alcohol with some sweetness. The flavor, although not as harsh, still is disappointing. Try again.

Draft pour on tap at GTMW 2013 (Madison, WI). Pours a nice deep copper hue, gentle haze. A frothy tannish head. Laces well and sits as a frothy layer. Aromas are tart and cherry, red wine and some balsamic. Gentle sweetness. Initial is firmly tart, sour, lactic twang. Red wine meets some balsamic, red cherries, tart. A touch cidery. Middle is tart, dry, some subtle sweetness. Backend is dry and lactic, firm vinegar. Finish is dry and tart, some decent red cherry. More balsamic. A touch messy but still pretty tasty. I’m all too often guilty of handling a little more acidity than others though.

Bottle from bu11zeye. Pours translucent copper with a transient head. Aroma of red berry, oak and funk. Med body. Flavor of red berry, lots of oak, and funk. It finishes pretty much like that. I have no idea why this ale is rated so low.

Growler thanks to bu11zeye. Pours with a small off-white ring over a hazed bronze to copper hued body. Aromas are of acetone and acetobacter, moderate caramel, huge esters, pear, pear drops, mild earth and barrel. Flavors are hugely acetic, mild acetone, a good amount of throat burn, nutty and toasty barrel. Cranberries. Acetobacter burn on the throat makes it nearly unpalateable. Lively carb, dry. Burn.

Acetone nose like a motherfucker. Seriously, smells like a nail salon. Taste isn't bad with only minimal nail polish filtering through. Poor appearance too. Pass.

Growler courtesy of bu11zeye. Red pour with a white head. The aroma is not good at all. I get a ton of nail polish remover notes, as well as a little bit of cherry. The flavor is a bit better. I get some toffee and brown sugar notes, as well as some vinegar and cherries. Unfortunately there is also some butter character in the flavor that is not good. Medium mouthfeel and medium carbonation.

8oz Draft A - Pours hazy rosy amber with a small off white head that dissipates quickly. Mild lacing. S - Intense vinegar, cherries, funk, with some oak barrel notes. T - More vingegar, tart juicy cherries, yeast funk , and wood tannins. M - Medium bodied. Smooth carbonation. Mildly acidic fruit finish. O - A complex ale. Not my favorite style, but can always appreciate a well done beer.

Tasted on draft at the Tap Room into a 12 oz brandy snifter. Ladies and gentleman, if this is an indication of things to come with Schlafly--like I think it is--then you should thank the good lord you’re a beer drinker alive today AND just one more reason it’s awesome to live in Saint Louis, Missouri, USA. It poured a cloudy red colour with thick white foam, thin but long-lasting with excellent Belgian lace. Absolutely stunning appearance. Tart, brightly acidic, some dark stone fruit notes, subtle tangy perfumey hops balance, some Champagne-like sharpness, faint hardwood tannins, aged fruit-wine aspects, with delicious lacto sourness and brett earthiness, even a little barn-yardy in a good way. Aspects of a bitter lemon Italian soda and unsweetened cranberry juice and Greek yogurt and kombucha. Light body, somehow still possessing a crisp grainy mouthfeel, with spritzy carbonation and lingering multi-layered aftertaste which eventually finished dry. These wild-fermented beers are so complex and unfamiliar, they can be difficult to fully describe, so in comparison to three of my all-time favourites: it tasted like Monks Café Flemish Sour Red Ale/Bios Vlaamse Bourgogne but more approachable, less acidic, with the layers harmonious overall (yeah, seriously); it tasted a lot like Lost Abbey Red Poppy Ale but brighter, less caramelly, and lacking the specific sour cherry twang; and it even reminded me a little of Cantillon Bruocsella 1900 Grand Cru but, well, less profoundly lambic-y. I honestly didn’t pickup any of the harshness or vinegar notes that others have described. This is a thing of rare beauty, a nearly transcendent experience for just $5! Keep up the good work, guys!
