COMMERCIAL DESCRIPTION
Around the time of the Louisiana purchase, beer was shipped in barrels. if one had been lucky enough to receive a used Bourbon barrel of Imperial Stout, this is what his/her happy taste buds would have encountered: roasty, rich, malty imperial stout with a strong dose of caramel, oak, and Bourbon character. This is the perfect beer to pair with hearty, cold weather dishes, smoked meats, and virtually any dessert.

Bottle - Bourbon barrel, vanilla and cocoa. Jet brown with a brown head. Light and sweet vanilla with cocoa. Nice and fairly balanced with lots if cocoa.

A one and a half inch, mostly smooth, medium khaki head dissipates to a frothy island with smooth extending beaches. A black body reveals a bright honey-amber highlight where the stem and bowl meet. Cave drawing-leopard lace decorates the walls of the snifter.

Initial aromas are smooth and inviting with an obvious spirit barrel character. Creamy coconut and vanilla barrel notes. A swirl kicks up another creamy half inch head, and offers a momentarily brighter sense of wood with a more sour fruit like spirit layer. With warmth well into the sixties, inviting tones of pecan pie appear.

A smooth and creamy heavy weight body rolls across the palate. Dark chocolate syrup-treacle unites with the aforementioned notes of the aroma, all followed by a moment of glowing bourbon. Raisins accent throughout each sip and finish, with the residual bringing creamy coconut back into the spotlight.

Based on my experience with this fresh a couple years ago, Im very pleasantly surprised with how far this has come.

750 ml. bottle. It pours a dark, cola brown with a small tan head. The aroma is super nutty with lots of wood, toast and background chocolate and vanilla notes. The flavor is more vanilla and bourbon forward with some strong toast, chocolate and caramel. Pretty sweet and woody in the finish. More interesting flavors come out as it warms like root beer, cola, anise, dates and plum. The body is medium and perhaps a bit thin for the style, but I kind of like this as oppose to the syrupy BA beers that are more popular. Not bad stuff, and a good bourbon stout fix for a reasonably attainable beer.

Draft to taster at The Tap in Bloomington. Looks solid; a translucent brown with light beige lacing. Smells of thin bourbon and oak. Tastes like it smells, but more robust. Decent on the palate; a little thin tough. Not bad, but underwhelming for the style.

On tap at Pour House. Black pour, nice foamy white head. Not much in the aroma but slight roast. Taste is nice roast, black strap molasses, and a sharp bourbon note. Decent.

11 bottle. Black pour with a scattering of tan bubbles on the edge of the glass. Aggressive, semi-hot bourbon with vanilla on the aroma with some chocolate and darker fruit malt underneath. Subtle coconut as it warms. Taste is bourbon with vanilla and light oak followed by a relatively unassertive imperial stout that presents with some chocolate and heavier, dark malt flavors followed by alcohol bitterness. Oddly light mouthfeel. Below average barrel aged imperial stout.

Bottle (2007): pours dark black with a thick tan head, aroma is malty, roasty, chocolate, boozy, taste is malty, very little sweetness, very smooth, some of the bourbon flavor is there but it has mellowed out. Probably one of the better aged stouts I have had. Held up really well.

UPDATED: FEB 10, 2014 Nice stout. Great vanilla caramel smell. Good amount of foam and carbonation. Alcohol taste is very present. Taste is roasty, alcohol, slight vanilla and Chocolate, bourbon, in that order. Nice. However, the beer has an oaky, weird, roasty slightly sour aftertaste, not good. Also a bit too thin.
