Inspired by the great West Coast IPAs, we have created a well balanced beer to satisfy all. Born of Amarillo and Centennial hops, this baby is well over 1 pound of hops per barrel while it’s still in the kettle and we dry hop with yet another pound per barrel once fermentation is complete. To balance the substantial hopping we provide plenty of malt backbone. The result is a complex interaction of bitterness, fruity fermentation esters and citrusy hop character.

ChillCoat (1029) - Concord, California, USA - MAR 30, 2005
On draft @ the brewpub. Cask Conditioned. Darker in color with a white head. BIG Amarillo hop aroma. Very good bitterness with a great malt backbone. An outstanding IPA IMO. I don’t know if this is the same IPA as the one most people have rated here. If it is, it sounds like they may have changed the recipe some.

bb (8270) - Alamo, California, USA - MAR 17, 2005
UPDATED: MAR 2, 2010 Draft. Medium golden beer with little head. Fruity hop aroma. Citrus and pine resin flavors with some grassiness and malt backing. It’s not going to displease IPA drinkers, but it doesn’t stand out. Batches can be a bit variable, but bumped it a little as later batches are tasting much better.

UPDATED: NOV 28, 2006 somewhat lite and floral . very sudued malt expressions with hop resins but not very bitter. all late edition hop notes.

Cascade studded India Pale Ale on tap Schooners Anitoch. Strikingly similar to SNCA. Although a bit watery pallate left somemore to be desired, that may have to do with it being served out of the tap. Very drinkable brew.

Tap @ Bistro IPA Festival. A light golden color. A light champagne aroma with an easy going IPA. Not assertive or as malty as I would like with a mild pine element.

Light gold color. Small sized white foamy head. Aroma is very floral and slightly fruity. A light to medium bodied IPA. Malts are fruity and slightly nutty and a touch sweet. Hops are kind of mild, and a touch citrusy. Tastes more like a pale ale than an IPA. Crisp and clean. Nice balance. Mouthfeel is full. Finish is clean and crisp. Aftertaste is slightly bitter.

Golden color IPA with a moderate hoppy taste. Not overpowering like some, but nicely balanced.
