Schuppenaas (Ace of Spades) is our fourth beer named after playing cards. For this beer we are obviously inspired by the great "Orval". We use a different yeast for the first fermentation but like Orval the second yeast strain is a Brett. For Hops we chose this time for Tomahawk and Simcoe. Additional Simcoe is added as dry-hopping.

Slight/medium aroma of malts, caramel, Belgian yeast, fruit, hops and brettanomyces.

Turbid/opaque amber/orange beer with a medium/large off-white head.

Starts slight/medium sweet with malts, caramel, Belgian yeast and fruit; ends slightly bitter, dry and sour with hops and brettanomyces.

Misty amber, dusty. Cognac, grape, light sweet, soft berries. Touch of sour, soft sweet. Less interesting than expected. Improved on warming. But ultimately a bit disappointing. (On tap at Zythos)

Couleur cuivrée trouble, forte mousse. Nez citronné-agrumes, levures, brett, note de "pourri". Gout levuré belge, vieille levures, agrumes-citronné, brett, avec forte amertume levure, raisin, agrumes en fin de bouche. Fort caractère. Pas trop a mon gout. Inspiré de l’orval? Bien moins subtile et moins de corps.

Bottle 33cl, shared by Calisky. A clear copper beer with huge head. Nose is sour like with green lemon notes. Aroma is on the same yeast variations, brett, lemony, light dental infection, very hoppy, on grassy and peppery side. Body is sweet, lot of agrumes, toasted grain, grapefruit notes, very bitter, especially at the finish, interesting, bit too grapefruit like.

Clear amber beer, good pale cream colour head. Palate is airy and dry, sharp fine carbonation. Sweet pale malts, some lactose. Candy fruits, crystallised orange and a touch of orange peel. Mild spice. Light semi dry finish. Clunky sweet but passable.

330ml bottle bought at Craftissmo in Tsim Sha Tsui East.

Looks: Translucent amber honey colour with a thin ring of dirt- like yeast sediments; Explosive three and a half finger head and long lasting crumpety off-white foam; Excellent sticky lacing with fizzy carbonation.

Aroma: Fragrant and sweet malt, with vanilla, light passion fruits, funk, leather, strong plums, caramel, sugar, bubblegum, bread, strong Bel yeast, lemon and light grass.

Taste: Mid to light sweet malt, with caramel, cherry, red fruits, molasses notes, light resins, wood, light funk, spices, strong yeast, strong lemon, strong bitter hops and grass.

Body: Medium body. Slick and quite creamy palate.

Mouth Feel: Fairly solid Amber maltyness in a smooth and simple background. Not much hoppy citrus taste but rather caramel and strong red fruits. Also very woody with some notable ooze. Brett’s funky taste isn’t as strong as the aroma suggests, but quite spicy and yeasty. Fairly light sweetness, with strong lemon to round. Fairly good.

Hoppiness: Light passion fruits, lemon and light grass in nose. Light resins, wood, spices, strong lemon and grass in taste; Bitterness is strong for a lasting, close to high astringent malty bitter finish.

After Taste: Quite dry. Yeasty and hoppy bitter to mouth.

Comments: An Orval clone? Well, there’s strong yeaty Brett aroma, but this one’s taste is simple, hollow, empty and underwhelming (where’s the fruity Simcoe?) compares to blistering, herbal and fruity rich taste of Orval. Nice as a pumped-up Amber Ale, but far from being anything special. Once is enough.

Hippoman (645) - Durham, ENGLAND - MAR 14, 2016
330ml Bottle from Coppers, Gosforth, £2.39. Hazy dirty copper colour with a frothy, off-white head that is initially huge but diminishes quickly and settles at a half finger. The nose is pleasant and sweet with yeasty, wheaty, ripe tropical fruit and creamy banana and peppery spice touches. Much of the same in the flavour as well as some sharp orange and grapefruit tones which lead into a long, pretty dry, peppery finish. Some marmalade and raspberry jam flavours are there too. Nice.

Flaske fra Belgisk Bryg, hjemm etter fin vinterferie i Dronningens by: lett uklar oransjegylden med flott skum som varer (flotte kniplinger og tett film helt til siste dråpe). Appelsin-, lime- og grapefruktpreget aroma og smak, med litt villskap og krydder fra gjæren i tillegg. Deilig bitterhet i den tørre ettersmaken. Gode greier!

Golden colour. Light malty and hoppy moderate yeasty aaroma. Flowery mostly lavender notes. Moderate bitter.
