Commercial Description:
An old ale prepared initially for the 2005 Toronto Festival of Beer. "I am brewing Chaplain's Solace Old Ale for the event, cask conditioned and drawn via beer engine. The Chaplain's Solace is a dark, chewy ale with hints of raisins and figs and anise combined with a touch of chocolate from the malt. Alcohol content will be 8.5%, and IBU's a modest 60."

Aroma of chocolate, fruit, and some coffee. Darkest brown, almost no head. Flavour has some fruit, mocha, treacle, and beautiful malt and hops. Extremely well balanced, bitter and dry. Lovely stuff! Well done again Mr. Mason!

Dark brown w/ a small, frothy light brown head. Little carbonation. Roasty, malty aroma of licorice & dark chocolate w/ notes of prunes, figs, & nuts. Full-bodied, chewy feel. Sweet, malty flavour w/ an earthy, rooty bitterness.

TFOB. Dark brown, small thin head (almost non-existent). Malt, roasted hints in aroma. Tons of flavour (I went back for the equivalent of a pint), roasted and malt notes, but also an earthiness and just a little bit of hops at the end. Chewy is a good word as well. This is a great old ale / porter. Shocked to see the alcohol. My favourite Scotch Irish yet, thanks Perry.

cask. brownish-mahogany body with a small brown bubbly head. aroma consists of caramel, chocolate, and mild berries. earthy, creamy body. notes of chocolate, licorice, and dark fruit flavour. bitter chocolate finish. pretty nice. Thanks Perry.

Cask sample at TFOB 2005. Dark chocolate-brown body with a small brown head. Mild but inviting aroma with notes of roasted nuts, chocolate & dark malt. Mouthfeel is smooth, a little oily & syrupy. Fantastic flavour profile with some dried dark fruits, licorice, oak, and a nicely bittered finish that combines hops and dark roasted coffee. Very porterish, and very good!

Draught (cask). Sampled at 2005 Toronto (Fort York) Festival of Beer. Poured a dark, oily black with a spare brown head. Aroma was very hoppy, baker’s chocolate, burnt candy, dark roasted malt, nutty and yeasty too. Flavour started out a bit medicinal, candyish and chocolately, as it opened up I got prunes, raisins, dehydrated apple, molasses and over-arching moderate hops. It finished somewhat long and a decent balance of malt and bitterness. Mouthfeel was at least medium-bodied, creamy and sticky but fairly flat. Seemed more like a barley wine / stout or porter, but I’m not complaining! I’d get it again if I saw it on cask at, say, Volo.

Cask. TFOB 2005. Dark brown body, with a very tiny chocolate head. Very mild acidity and nots of chocolate and alcohol in the aroma. Dry mildly acidic flavour, initial chocolate and some malt, pleasant hops lurking throughout.but come out more in the finish. Reminds me an awful lot of the homebrew porter I did with Blankboy, except this is better! Medium oily palate with muted carbonation. Suprisingly full body for a cask beer, and is quite pleasant since one of my usual (small) complaints with Scotch Irish’s one offs is that the casks are sometimes thinner than my preference.. (3+)
