Appearance: Clear reddish liquid topped by a head reminiscent of slightly yellowed paper. Quite rocky at first, dissipates to a filmy layer in good order and left smallish amounts of lacing.
Aroma: A spicy, peppery, and vaguely floral/vegetal hoppy aroma. This is definitely a British-style interpretation, not an American. Certainly no Cascade or it’s ilk were used. Bready, biscuity malts show up as well.
Flavor: Initially a lovely taste of toasted biscuit, quickly followed by some mildly bitter hops. Again, no Cascades here. Very British and quite a nice change for my over Cascaded-palate.
Palate: Decently medium bodied with some lingering hop aftertastes. Cleansed the palate pretty darn well, too.
Overall: An excellent session beer, I should think. It accompanied my burger quite well, and the beet salad even better. The earthiness of both blended quite well. I have seen other reviewers call this the hoppiest beer in Canada. I couldn’t say that for sure, but I’d definitely say it is the hoppiest one I’ve had so far.

Decent body... the countering sweetness does not ’wimp out’ the serious hops. Surprisingly smooth feel for an elixir so defiantly terpene, bitter and resinous. I am no big hophead, but this beer has ten times the character of many Micros. If you can deal with it. 8/4/8/4/15 ADDITIONAL LATER COMMENT This beer has endured some radical changes after Heritage took over the name and the brewing responsibilities. After some scary results - way too dark malts, nearly flat beer - the Sarge appears to be surfacing with a real identity that is no longer in crisis. A different beer than noted earlier, with fatter malts and more ’embedded’ hops. When this is on, it is more balanced than ever. Medium-bodied; Strong grapefruity hop flavour with an excellent balance of malt. Aftertaste very bitter from the hops and fairly clean from the malt. Overall, a very nice and bitter IPA, one definately worth trying! I had this pint on draught at the Winking Judge in Hamilton, Ontario on 13-September-2003 with Josh (Oakes) and Scott (Publican).
