A traditional Belgian Bière de Garde brewed for five hours. Boiled on the forest floor over a wood fire in a cast-iron kettle around which a hand-packed mud and brick oven was fashioned.

It poured a golden color with an off-white head. The aroma was of raisins, grapes, floral, some funky touches, peppery and dry. The taste was nicely balanced with some dry malt, perfumey hop notes, spicy elements and a dry finish. Very enjoyable.

Pour is a clear amber with a small white head. Aroma is caramel and other burnt sugar notes. Flavor is a nice rich caramel malt with some candi covered dark fruit. Very rich and malty. A nice example of the style and the best thing about having a beer is having at the brewery amongst god’s country. Mine was 5.7% called persimmon biere de garde.

Draft at scratch. From notes. My version was 5.5%. Pours a clear light orange. Spicy herbal hops with loads of dried fruits. One of the better ones ive tried from here.

Half pint at Scratch. My version is 5.5% ABV. A deep golden beer that wears a nice white foamy head. This is true to style. Nice fruit with honey notes, grains, rich malts, plentiful spice, and an interesting hop profile.

seymour (1895) - Maplewood, Missouri, USA - FEB 2, 2013
Sampled on tap at the 2nd annual Urban Chestnut Wolpertinger party in a dimple mug. It poured a hazy orangish-amber color with thick, fluffy, long-lasting beige foam and lots of Belgian lace. True-to-style aromas and flavours: malty, slightly caramelly, hints of toffee, herbal spiciness, woodsy tannins, warming alcohol, cool fruity aspects: dried apricots and golden raisins, faint resiny hops. Medium body and carbonation, lingering multi-layered bittersweet aftertaste. There were lots of beers today in this general style, but this was possibly the best. Better by far than Ommegang, which is high praise indeed. Another great beer from the brand-new Scratch brewery. So glad they came!
