COMMERCIAL DESCRIPTION
Kings & Spies is crafted from a blend of local heritage apples - primarily Kings and Northern Spies - yielding a fruit-forward, Italian-style sparkling cider. Proceeds from this cider support Lifecycles, a Victoria organization that promotes local food security.

Bottle at the cidery
Pale yellow color. Delicate and balanced aroma, fruity and a bit flowery. Semi-dry mouthfeel, well carbonated, the body is not weak, it has a good apple flavor and moderate acidity, a bit of alcohol and light astringency in the final.
Similar to French cider. Good.

750 ml bottle. Pours a clear, pale gold with light head that dissipates quickly. Aromas of tart golden apples. Nice tart green apple flavor with a good dose of carbonation followed by a lighter, sweeter applesauce finish.

Bottle. Very light color, more carbonation than most ciders, and a better than average aroma of apple and some interesting earthy notes. Flavor is dry, tart, almost sour, with maybe some lemon and grass or hay notes in the background. Finishes dry and tart. You have to like dry ciders to enjoy this one, which I really don’t, so I won’t be coming back to this again.

Notes from Cider week at Bottleworks 2012. Pours golden and extremely effervescent. smells of apples, pears, grapes and acidity/sourness. tastes of ripe, tart, acidic fruit but the effervescence was so incredibly refreshing that I couldn’t stop drinking. If you are looking for a tart champagne, this was great!

2012 vintage (April 16-2012-19). Completely clear straw yellow hued pour with signs of carbonation but no visual head (unlike their other ciders). Aromas are nicely warming, zesty, fresh baked bread, a bit yeasty, doughy, good acid, tannic apple skins, vibrant fruit. Exceptionally good nose. Flavors are quite fruity, medium dry. A but heavy on the body for what I expected. Slightly carbonic. Vibrant fruit, good strong acid balance with medium tannin. Pretty clean otherwise, very light sulfur. Slight hint of leathery funk as it warms. Very pleasant.

750, capped, swingtop. Pours a clear pale gold with lively carb and a light sudsy film on top. Big tart tangy forward bright apple nose, lots of green apples and apple skins. Creamy medium body with lively carb. Tons of tart and even puckery fruit flavor, intense but still surprisingly approachable. Mild tangy finish. Good stuff.

Bottled. Watery pale yellow. Tart and fruity apples, yeast, and skins lead to a medium sweet aroma. The blend of apples really brings some nice complexity. Soft bubbles, short head that quickly fades to nothing. Light sweet, tart flavor. Light body, good carbonation, light tannic texture, and a medium acidic finish.

Bottle. Light straw tinted yellow, still. Juicy balanced between lightly sweet and tart, hints of a sweeter white wine. Delicate floral, honey and sweeter fresh apple flesh with slight melon and some dryness in the finish. Pretty balanced and solid.
