COMMERCIAL DESCRIPTION
Home-grown heritage apples, including Winesaps and Gravensteins, were hand pressed using our traditional rack and cloth press, slowly fermented with Champagne yeast then aged in rum barrels. Notes of brown sugar and spice give complexity to this semi-dry sparkling cider. Admin: 2006 batch, barrel-aged in Newfoundland Screech Rum barrels. Summer 2007 release.

Amber pour. Medium bodied with low carbonation. Combines some tart and sweet apple flavours with smoky rum and molasses notes. Lots of complexity for a cider.

This stuff is both delicious and dangerous. Sweet but not overpowering. Great apple flavour. Easily my favourite cider.

Pours a dark brandy colour. Big apple aromas and flavours. Nice kick from the booze as well. Deep and complex. Excellent!

Thanks Bvery Amber pour with no discernable head. apple, woody, brown sugar aroma nice apple flavour, woody spiced rum as well. Very drinkable and the alc is not noticable at all.

Bottle. Clear orange-amber pour with minimal head. Aroma is booze and appple. Medium slick palate. Taste is apple, cinnamon, spice, booze, and simply amazing. Fantasic cider!

Bottled. A hazy deep red cider with a lazing beige head. The aroma has notes of rhum, wood, apples, brettanomyces, ans caramel. the flavor is sweet with notes of apples, rhum, wood, and some brettanomyces, leading to a dry and tart apple finish. Thanks fiulijn for sharing.

Bottle at Alex. Hazy orange red coloured with a samll white head. Fruity aroma of apples, rum and dried apples. Fruity flavour of apples with notes of rum and dried fruits. Fruity finish.

Shared bottle with northropfrye. Delicious. Sweet but not overly sweet. The flavour of the apples came through nicely. This is a very fine cider.

Sample at beer festival. This is a powerfully flavourful cider. Perfectly sour with nice alcohol notes. The best cider I’ve had.
