Bottled. Hazy amber coloured. Pleasant fruity and flowery aroma. Sweet flavour with notes of different fruits and some honey.

Light amber color. Pear, hops and citrus in the aroma. Vinous, slightly hopbitter flavor. peppery, pear, hint of mustard. There is some complexity in this pretty nice beer.

lachesis (756) - St Idesbald, BELGIUM - AUG 1, 2005
Slight hazy warm-amber color very creamy white yellow froth. This beer has a fine lively caracter and a very expressive nose. It has aroma’s of barley, slight caramelized malts, some touches of brown sugar, mapple sirup, cumin-seeds, corriander, cookies, fresh mint and a faint touch of hops. The taste is silky and light sweet with a fine elegance. The sweet malts and the cereals are well in balance. You can also notice some touches of dried figgs, and Marocan sweets like nuts in caramel and sesameseed-galets. The slight fizzy caracter gives some extra freshness to this well made beer. Couleur cuivrée parsemée d’une abondante mousse blanche aux très fines bulles. Arômes complexes évoquant les fruits confits et les épices. Salade de fruits, gâteau aux fruits confits, poires, abricots et cannelle pour ne nommer que les principaux arômes perçu ce jours-là. En bouche, les épices et le doux sucre continu de s’exprimer malgré la puissante et intense amertume. Les caractéristiques apportées par les levures nous rappellent vivement que nous sommes en Belgique. Complexe et bien fait. Encore!

Apricot, pear, melon, cake-like yeastiness, perfumey sugariness in the complex, sweet, fruity aroma. Hazy burnished copper coloured body with dense cover of fine-bubbled white head. Sweet fruits and sugary spice cake flavours with intense finishing bitterness. Medium body has pin-point, prickly carbonation. An excellent first sampling from this brewery, leaves me looking forward to more... Bottle enjoyed with MartinT, Olivier_MTL and Rastacouere.

The Lure:
Sweet fruit cake (oranges, pears, litchis, etc.) pricks the nostrils and heralds oncoming dessert. Unique and inviting.

The Festivities:
Doughy yeast serves as the foundation for the aforementioned sweet fruit cake. Hop bitterness surprises round the corner of a random peach and remains fit till the end. At this point, it appears not cohesive enough to me, although its individuality is certainly appealing.

Transcendence:
A future genius trying out his first experiments.

Rastacouere (6125) - Montreal, Quebec, CANADA - MAY 9, 2005
Sunset coloured, strikingly big initial foam, sticky, but diminishing to a large ring. Huge fruit salad aroma containing highly juicy cantaloupe, mango, pears etc. nuances dominating an estery and cakey yeastiness. High level of sweetness, but displayed over the fruit tones and a vast array of complementing flavours so that it stays well balanced. Very yeasty, perfumey and doughy, but nevertheless all about the fruits. Bready yet white wine reminiscent taste thus reminds of mead. Figs and slight alcohol complexities emanate through the peppery and spicy mid-mouth that evolves into a clean bitterness, both skinny and woody. Full small-bubbled carbonation, oily medium body. Lots of character. Unique and brilliant. Cheers Olivier!

Schroppfy (2360) - Łódż, Warsaw, Poland; Michigan, Ohio, USA - SEP 24, 2004
W/JSYSOH. First pour perfectly undisturbed. Beautiful slightly red amber, clear as a bell. Smells of fresh fruit; peach, watermelon, banana, in that order. Very sweet, but not careening into overload - this could be the single best sweet, fruited, not-lambic based beer I’ve had (although difficult to compare to a blueberry stout, for example). Rich, yet medium-bodied; fruity malt seems related to the watermelony Stone 7th Anniversary. Hop presence is totally undectable, but with a swirling slightly cardboardy yeast later in the pour. A malt and fruit extravaganza. First batch from this new brewery - I can’t wait to try more.

Cloudy light amber color. Nice malty aroma, a bit spicy, fruity. Very good flavor, smooth, malty, very well balanced. A powerful Saison (sweeter than the average).

Kåstå (1273) - Mol, BELGIUM - MAR 16, 2004
Clear orange-amber coloured beer with a big white disappearing head. The aroma is alcohol and light fruity. The mouthfeel is rather soft with a sweet fruity taste. Light sweet spicy finish.
