The Seifu's Tej, specially bottled for Ethiopian Restaurants, compliments the smoothness of honey with a distinctive, soft earthy characteristic. The floral undertones and rich honey flavors are perfect paired with highly seasoned cuisine (i.e. Ethiopian or Indian fare).

750 ml beautiful cobalt blue bottle. Pours a clear pale gold, more straw colored than yellow, with no head. This is a still mead. Faint aroma of honey. Not a bad smell, just extremely light. Thankfully more flavorful than the aroma would indicate with honey being the main flavor. Not really that sweet. Light, almost delicate on the palate.

This mead seems to have some sweet honey apricot flavors with a medium finish. The sweetness is somewhat balanced and the texture reminds me of a glaze. This is made for the Ethiopian royal family from what I’m told and has to fulfill certain requirements.
