Septem in Latin means seven, the number of creation. Winemaker Sofoklis Panagiotou has been inspired by the philosophy and the ritual of winemaking to craft beers using 100% barley malt and fresh whole-hops of the finest quality. Unpasteurized , filtered. Hop: Styrian Golding, Tettnanger

Bottle. A small, white head sits on top of a clear, golden body. The aroma is fruity, with pale malts, citrus notes and honey. Quite decent. The same goes for the flavor. Citrus, pale malts and some honey hints. Decent bitterness. Medium body, dry, with decent carbonation. Quite pleasant bitterness in the finish. A beer I wouldn’t mind drinking again if in Greece, but it’s far from interesting enough to make me want me buy if I found it in my local store. 120914

Bottled. A hazy golden beer with a thin white head. The aroma has notes of honey, flowers, dust, and malt. The flavor is sweet with notes of honey, malt, and flowers. The mouthfeel is a bit sticky.

Bottle. Pours a light, transparent golden color with a tinge of orange and a bit of white bubbly head. Aroma is malt, honey and some funk which is nice. Taste is a little buttery, malty, honey sweet with some light bitterness and sweetness on the finish. Nice and balanced. Slightly too bubbly, but really delicious.

330 ml bottle. Clear golden body with a medium sized off-white head. Aroma is light malty with a clear but not to dominating honey, hint of spices. Flavor is light malty, fruity and moderate honey. Thin body and medium aftertaste. OK, refreshing and smooth but not particular exiting.

Bottle picked up at House of Beers, Rethymnon. Pours clear amber with a small white head. Aroma of fruity hops. Taste is strong hoppy fruity, some sugars early on, dries up towards the end, cant say i detected a trace of honey though.

330ml bottle at the House of Beer, Rethymno, Crete. Clear, golden body. Film type layer at the surface. Smooth floral fruity to the nose, as well as a touch of herbal hops. Fruity hops in flavour, lightly spiced. A modest impact of honey sweetness can be detected. Subdued bittersweet endnotes. Clean in the mouth. Well bodied. Nice and very smooth (14.08.2012).

(33 cl bottle from Beeraria, Rethymno; BBD: December 20th 2012) Pours a clear golden with ample alas quickly receding, white head and lively carbonation. Aroma is remniscient of honey with some interesting but faint, herbal hoppy notes. Oily texture, full-bodied and a bitter finish. The honey is more present in the flavour although it never dominates and is countetbalanced nicely by the herbal hoppy bitterness at the end. A well composed beer. Girlfriend says: "It’s the best honey beer I’ve ever tasted."
