COMMERCIAL DESCRIPTION
Bottle conditioned;
Sharp's has launched a new beer in partnership with Rick Stein. The beer is named "Chalky's Bite" in tribute to Rick's faithful canine friend. Chalky's Bite is a very special beer with a brewing and maturation process of over four months. The beer is triple fermented using both the Sharp's yeast strain and a special Belgian strain and is uniquely flavoured with wild Cornish fennel.

Bottle. Gold with a small head. Soft, sweet aroma, but hard to distinguish any particular notes. Sweet fruity flavour, bit of pear, some malt. Smooth mouthfeel and nice finish.

A good year in the cellar and it’s time to crack this one. At just on cool and into a snifter. Yeast on in it quickly disperses leaving the beer just shy of bright. Finely carbonated with a resilient, compact pad of white atop. There is a little Burton snatch to the aroma; it is mineral-like hinting at salted caramel with a touch of chamomile, orange zest, dried herbs, musk candy and just a touch of anise. Sweet, cara-malt front, biscuity and doughy. Orange blossom and fairy floss candy comes out and begins to dominate, floral towards the back. Finishes with a light note of the fennel anise and a taste reminiscent of orange vitamin ’C’ tablets. Very creamy and soft in mouthfeel, well rounded with a light warmth that hits the stomach well. Long citrus linger. Sharp and tangy to balance the sweetness; low hops. A very likeable brew. Oddly refreshing! (33cL, BB 26/05/13, Dart’s Farm, Topsham, Exeter, Devon)

Given to me, along with a load of other interesting beers for doing a Christian Fellowship quiz night. I’ll offer again if they pay this sort of wage! Brown 330ml bottle, best before 29th June 2009, drank 6th March 2008. Poured into a Corsendonk stemmed Tulip glass. Because it is bottle conditioned I poured it very slowly and carefully. I was rewarded with a lovely looking, clear, Old Gold coloured beer with a large, snow white head. Plenty of bubbles rising upwards to the head indicated a lot of carbonisation. I think this is the first time I have given a 5 for appearance (in almost 400 beers reviewed). The bottle claims Wild Fennel has been used to flavour the beer, I couldn’t detect any in the aroma, only yeast esters and some barley and wheat notes. Tangy and sharp taste, again no hint of fennel for me, more of a ginger style heat bite to it. There is a warmth to the beer that’s for sure. 3 Months of maturing has added something to the beer, it has Duvel type feel to it. The warmth stays and so does the tartness of the intial taste. The 6.8% rests easy within the beer too, making it a very pleasant drink in deed. I liked this a lot, a very good beer and very un-English in its style.

A hazed orange amber with a thin white head. In aroma, strange fruity esters with metallic notes. In mouth, a sweet maderized malt with light treacle, musty, lingering hops, some roasted coffee in finish. Not bad.

Bottle. Orange colour, thin white head. Odd sour alcoholic aroma. A weird sour taste that isn’t altogether pleasant, surprisingly hot alcohol, dry finish. When a UK beer smells and tastes a bit sour it’s usually an indication something has gone badly wrong but I figure in this case its probably intended and it’s not terrible but doesn’t really work that well either. Fine.

[3830-20110723] 330mL bottle. Malty aroma has a very slight citrus note to it. Hazy, orange body with no lasting head. More maltiness in the flavour with a lingering sweet bark. Medium body. Fine. (6/3/6/3/13) 3.1
