COMMERCIAL DESCRIPTION
Cinnabilly has an appealing look and aroma. This clear, caramel colored gem emits a soft potpourri of cinnamon sticks, brown sugar, and hints of vanilla. Sweet malt flavors allow for an array of sensations, ranging from toasted almonds to cinnamon graham crackers. The pleasant addition of cinnamon creates wonderful accents throughout the beer that are never overwhelming.

Bottle. Pours a dark amber with small off white head. Strong cinnamon aroma. Kind of makes me think of a wine cooler. Taste is of burnt cinnamon. Body is lacking. Seems a bit watery. Ok, but not great.

This pours a crimson red with about an inch of foam . The smell proves the name of this brew to be absolutely true. Cinnamon galore! Until the cinnamon moves into the taste, which ain’t long, I get a mild caramel malt flavour that verifies the style..it also shows up in the finish. A bit of earthy malt; then, it cinnamon time. Medium bodied, zesty level of carbo. I went into the session expecting to taste cinnamon and by golly, I sure got it. I’d call it a good festive brew for the winter holidays. Thanks, Trent!

Smells like spice candles and air fresheners. Cinnamon taste plus mineral water and light soap. Medium carbonation with a bit of foam and somewhat watery. Gross and very disappointing.

Draft on tap at Brickhouse (Madison, WI). Pours a deep rich ruby copper pour, blood red with good glow, a mellow haziness. Frothy whitish head atop is mellow, subtle ring with ok lacing. Aromas are a bit carmellized and bready with some citrus hops, subtle lemon and grapefruit meet some gentle spicy and hot cinnamon. A subtle spice, nice color. Aromas are a bit spicy and dulled, some gentle cinnamon, earth, mellow citrus. Touches of toast, some bready malts. Initial is a middling body, touches of cinnamon, gentle red hot, bread and faint toast. A bit of earth, some gentle spice. Mellow earthiness. Middle shows some cinnamon, red hots, touches of bready malts. Backend is dry, a bit spicy and cinnamon driven. Touches of gentle carmelization, toast and toffee. Touches of biscuit, some spice and sweetness. Ok.

bottle. Light brown with one finger head. Sweet and malty with a good amount of cinnamon. I generally dislike dopplebocks, but this is pretty solid. The cinnamon might get old though -- glad I only have one bottle to drink.

Taster on tap at Brickhouse BBQ in Madison (during GTMW). Mostly clear red orange color. Thin off-white head. Some ropes of lace. Medium to bigger body. Smooth, kind of soft, lighter carbonation. Light slick texture. Caramel malt, and big cinnamon flavor. Reminds me of a cinnamon roll, cinnamon sticks. See the graham cracker. Moderate bitter taste, moderate sweet, and a big overall spiciness. It’s pretty cinnamon, yeah. It’s all cinnamon, really. A bit too spicy to be drinkable in the end. Alright. Fun stuff to try, but wouldn’t want more than my few sips

12 oz. bottle thanks to fishmich. No bottle dating. Copper color with thin head. Aroma is cinnamon sticks mixed with dirty gym socks. Flavor is burnt brown sugar, dirty earthy malts and cinnamon to boot! Just a ton of cinnamon in a light watery body. Has a light sour note in the finish that makes me question the age or borderline infection. Something is just a tad off here.
