Hazy amber ale covered by a tight and proud off-white foam. Good looks. Biscuity, toasty (and quite cerealic with a certain depth in that department) malt base supports the hop show going on above it all. While not the most perfumey IPA, this boasts a confident sprucey carnival, adorned with orangey notions aplenty. In mouth, their importance is magnified. The hops grow by the sip, entangling the back of the tongue with a rich bitterness, resinous, citrusy, insisting at length. Fresh, tasty and balanced by a full, engagingly carbonated palate. Exemplary IPA, possibly better than any bottled Québec IPA.

In short: A full body nourishing IPA with intense resinous coniferous hopping. Great brew.

The look: Cloudy dark golden topped by a small beige head
In long: Nose is intense with a lot of coniferous tree, you can smell that beer from a few feet away. Body is full with a lot of toasted cunchy/crisp caramelized cereals. A truckload of assertive confinerous hops with a strong resinous character. A light orange peel sensation. Strong bitterness. Light dryness. This is not a refreshing hop juice beer, this is a nourishing tasty IPA. Wow! This was a kick-ass IPA. Too bad this brewpub is 2 hour drive from my place. Because now I feel like a poor has-been rock star desperately trying to make a comeback, I’m depressed because I don’t have any Inspiration anymore.

UPDATED: AUG 14, 2012 Sample at "La Soirée des Brasseur" beer fest in Shawinigan on August 12, 2012. 100% Zythos hops (#23). Creamy blonde, medium head. Creamy aroma of raw grain, well hopped. Taste of green hops a little sweet and a little spicy, very good bitterness. A very solid and well-hopped IPA, that’s good!

On tap at the brewpub. Copper colored pour with thin white head heavy lacing. Aroma is piney with pink grapefruit, a bit of earth too. Taste is very bitter, lots of piney hops, very hop forward, deliciously unbalanced. Palate is very dry, some alcohol presence. Good IPA.

On tap at brewpub. Inspiration 11 5.5% abv Citra.
Appearance : Slightly hazy with a small creamy head. Nice lacing.
Aroma : Great floral and citrusy hops. Nice tropical fruits. Fresh and fruity.
Taste : Light caramel with nice malt and floral hops. Nice fruity notes. Resinous and bitter. A bit sticky on finish.
Overall : Intensely hoppy but rather drinkable. Nice tropical fruits coming from the cirta. Not too much caramel. Very well made.

Version #26 (Houblon Colombus et Cascade). Dégustée en fût sur place. De couleur ambrée-dorée et légèrement voilée. Nez de houblon herbeux (herbes fraîches, traces de menthe et de thé), résineux et aux notes citriques, fruité (agrumes, notes de pêches et de fruits tropicaux), moyen de grains de malt sucrés avec des petites notes de pain. Moyennement ronde en bouche avec un pétillement moyen ainsi qu’une texture aux notes huileuses. Goût moyennement amer de houblon herbeux (herbes fraîches, traces de menthe) aux petites notes citriques et accompagné d’un goût fruité (agrumes, moyen-léger de fruits tropicaux) lors de l’entrée en bouche auquel se rajoute un goût de grains de céréales avec des notes de pain puis en finale l’amertume de houblon se fait légèrement résineuse, plus herbeuse (incluant des notes de thé) et légèrement asséchante. Post-goût moyen-long et un peu sec, moyennement amer de houblon herbeux, légèrement résineux et aux notes citriques avec un goût fruité (agrumes, traces de fruits tropicaux). (23 janvier 2013)

Inspiration 11 (Version cintra). En fût. Verre de 10 oz dégusté directement à la brasserie. Arôme: Très forte odeur de fruits tropicaux. Apparence: La couleur est dorée légèrement voilée. Présence d’un mince col mousseux et d’une fine dentelle sur le verre. Saveur: Goût de fruits propicaux avec une pointe de caramel. Durée moyenne de l’arrière goût. My Bottom Line:
Pears and citrus fruit aplenty garnish this IPA’s plump cereals, taking you to a potent resinous bitterness.
Further Personal Perceptions:
-A veil of foam tops the amber-y mist.
-This was very drinkable, but the flavor profile didn’t feel as polished as most Siboire brews.
-The resinous bitterness felt a little too coarse for my liking. The same aroma and flavor profile could have lead to a friendlier finish for more drinkability.
-The aromatic potential of this hop variety is truly wonderful.

Sorachi Ace batch at Soirée des Brasseurs 2011 in Shawinigan. Deep orange blonde topped by a whitish head. Nice aromas of bitter orange and pepper. Low to medium body, medium bitterness, a little thin for an IPA, but the finale is very refreshing. More an APA in my opinion with its low bitterness in the mouthfeel, but still a very satisfying ale.
