Our Brett Venture series is the exploration of how single strains of Brettanomyces ferment and condition a Saison malt bill. Each Brett Venture will be fermented in and aged in wine barrels with a different Brettanomyces strain to showcase its unique characteristics.

100% fermented with a brett strain from Cantillon, like Brett Project #1 (Brett Venture #1), but with lactobacillus added to the Chambourcin barrel, where it aged for six months. The result is similar to the lively characteristics of Brett Project #1, but with more acidity.

Bottle. Hazy golden pour with no head. Light citrus, lacto , Brett aromas. Light citrus, Brett and lacto flavors. Drinkable.

Bottle sample thanks to phaleslu during the post Grand Tasting bottle share in our room. Pours a hazy golden color with a medium sized white head. The aroma and flavor have Brett, grass, tangy citrus, some mild tropical fruit notes, dry, farmhouse funk, lactic character is more noticeable, yogurt, some mild barrel character, better than the non lacto version though I would like to try this again in a different setting.

This is really freaking great! Cloudy yellow with a bright white head. Perfectly sour, great stone fruits and lemony flavors. Carb is perfect. The funk in the background is spot on. I could really drink a lot of this.

Bottle shared at the CCB Brewpub PreHunahpu Tasting - Pours a hazy yellow w/ white head. Very bretty in the nose with some lemon zest. The taste is fuller compared to the non-lacto version. A nice malt build, lacto, peaches, lemons, and really smooth. More funkier and so much better. I’d give this two thumbs up.

Quite a bit of lacto tartness, lemon spritzy with a bit of straight funk. Slight grainy flavors. Good, but preferred b2.

>> Thanks phaleslu for the share. Pours full haze, bright straw. Weaker foam. Nose is vanilla frosting, peach, white wine barrel, flash of chlorine. Taste is peach, wheat, yogurt, flash of chlorine. Palate is bright, effervescent. Not my favorite of the bunch.

Bottle shared by Peter at RBWG 2014, thanks! Pours a cloudy yellow with no head whatsoever. Aroma has light tart fruit note with earthy funk and just a bit of a light grain note. Flavor has a bit of a yogurt note with fruit and a bit of a tart bite towards the finish.

Bottle during RBWG Asheville. Thanks to phaleslu for the taster. Hazy yellow pour. Smells of cheese, citrusy brett. Same in the taste. Nice acidity, long, sour, finish. Good.
