Tradition and knowledge are important for both natural cider and the Zapiain family. It is a natural drink with body, fizzy with its own bubbles from its own fermentation. It is light and easy to drink. A pleasure for both its customers. It should be drunk cold, but not too cold, in a long wide glass.

Green bottle cider shared by beastiefan2k. Thanks! Pours a suspicious golden yellow color with no head. Fresh spiced apple aroma. Flavor is initially tart. Comes off as a pear cider to me. Aroma is consistent with apple, but flavor is all over the place with tropical fruit. Long sweet finish. Not bad.

750mL screwtop green bottle at Schilling Cider House in Seattle. Tried to pour it the natural way but spilled it all over the bar top. Bubbled up but low carved. Aroma is not foot mj but its super funky, lambic-like Brett and I swear passion fruit and only a but of apple. You know its a good cider when apple is the minor character. Flavor is less musty and musky but not "apply" like the WA ciders I have been drinking it before it. Again I get tropical fruit and drying light tart finish.

Tap @ Sagradi L’Eixample, Barcelona, 17/06/15. Pours a slightly hazy yellow. A nice, lightly sour, somewhat acidic, apple. A good drink, especially with pinxtos.

Bottle. Hazy hay yellow liquid with minimal white head. Aroma of green juicy apple, apple skin, light lemon, light wood and red apples. Taste is very light sweet and light sour with notes of apple skin, light wood and lemon. Medium bodied with low carbonation. Really nice.

In short: funky watery cider.
Pours cloudy greenish with little vanishing white head. Good lacing. Funky, sour, barnyard, apple nose.Light body, average to high carbonation, crispy texture when drank right after distance pouring. Some viscous mouthfeel, still a bit short one, some watery, little sour finish.

Bottle in Barcelona. Appearance is hazy gold. No head. Taste is medium high sour. Aroma is tart, citric, apple.

Bottle. Neon yellow. Yeasty applesauce aroma. Sour green apple start, dry, lemon. Mellow medium light body. Quick finish.

In short: A nice Sidra with a stronger than average farmhouse funky character. Nice
How: Bottle at Atari Gastroteka, San Sebastian Spain.
The look: Partly cloudy yellow-blonde body with no head to speak of.
To me a typical Sidra is: Funky aroma of medium intensity with many light color fruits in the back (not just apples). Body is medium in size, a texture that is both juicy and doughy and with minimal carbonation. Taste is a lot less apple-forward than a regular cider with apples but also various light color tropical/citrus/exotic fruits. Yeast presence accompanied by a bready sensation. Typical Sidras have a mild sourness and ends with a mild-medium acidic bite. Thirst quenching and also a bit nourishing.
This one: More intense farmhouse character, more doughy bread, a little more carbonation than average. Slightly above average example of the style. The wild farmhouse character of Sidras is apparently obtained by fermenting the liquid with a dead cow in the tank according to an internet rumor I just started in this rating.

Sampled a couple of times while in Basque country. Pours a cloudy, dandelion gold with zero head. Nose is solid, cheesy, apple skins, apple juice, some mild lemon, a little earthiness. Flavor is the same, sweet and tart, earthy and funky with a little bit of yeast. Lightly chalky finish.
