Tradition and knowledge are important for both natural cider and the Zapiain family. It is a natural drink with body, fizzy with its own bubbles from its own fermentation. It is light and easy to drink. A pleasure for both its customers. It should be drunk cold, but not too cold, in a long wide glass.

Beer4000 (4613) - Kristiansand, NORWAY - AUG 29, 2011
Served in a glass at a tapas restaurant in Spain. Totally unclear yellow/orange body with no head and moderate carbonation. Aroma is pretty rustic acidic apple and relatively much yeast. Flavor is semi-dry, acidic sour apple with yeast and hint of flowers. A bit unusually and definitively refreshing. Not complex, but it feels very real and I appreciate that a lot.

UPDATED: AUG 12, 2011 heavy stinky foot must nose with cheesecloth and acerbic apple must. zesty but minerallic and chemical-like yeast. strong bitterness growing across mid-palate sustaining into a lengthy finish. sharp acid throughout. much better the second time around.

lot KN22, bouteille de 2009. dorée/foin, plate avec qcq bulles. Pomme aigre avec qcq notes de sucre et de levure, le tout garde cet aspect organique et bio de pommes fraiches ainsi que de fleur de pommier, légère note de vinaigre/aigreur riches en tanins. Reste typique dans le style de cette région.

75cl bottle from Eroski, Bilbao. Hazy, pale yellow-greenish colour. Aroma of sour apple, yeast, cheese. Flavour is sour fruity, medium carbonated. Bit of barnyard. Well done.

Pours a nice yellow, but quite muddy. No head. Aroma has oak, green apples, zesty apple peel and quite a lot of sulphur. Almost no carbonation, fair dry mouthfeel, though it’s a bit thin. Flavour has some clear vinegar notes, green apples, some burning sensation in my throat. Light sweet spple and fair dryness.

Botella. Hazy goldenish colour. Fresh apple sour aroma. Good mouthfeel. The flavour has a nice apple frutiness with a very pleasant soft sourness. Aplle sour finish. Yum!

bottle 75cl from el corte ingles, palma, mallorca ar:sweet/sour apple, sweet vinagre. flavor: quite acid but appears well balanced, and slightly aged fruit flavors. more fruity than apples. also some citrus, slight orange. delicate. this is a good cider, delicate, reminds me of good sour beer.

A Mes rate: bottle at Taverna Basca Irati in Barca.
The barman was well pleased with himself when he poured this holding the bottle behind the back of his neck into two glasses he held down by his waist. Sadly for him, I knew it was coming but I still gave him a polite clap. Still it was the most novel pour I have seen. Anyway, a cleanish yellow gold colour. Slight sulfur in the aroma but some nice juicy notes sort it out. More peel than flesh in the flavour. Nice casky feel with a good dry woody finish plus some light salt and pepper spare ribs notes. Good enough but not amazing.

A hazy cider, golden and enticing, Wild apples in aroma, with light lactic qualities.In mouth, a gueuze like cider, lightly lactic, nice golden apples. A nice first drink in Barcelona, at Sagardi Euskal Taberna, 1.75 Euros. Mid November 2006.

Miksu (4972) - Jyväskylä, FINLAND - JUN 3, 2008
0.75 l bottle, 2007 vintage. Hazy yellow color with no head. Dry and acidic aroma with grapefruit, lemon and pineapple. Dry fairly sour and tart flavor with notes of citrus fruits. Sharp sour finish with acetic acid. Very low real ale like carbonation. Almost like a lambic, haven’t tasted this kind of cider before!
