Tradition and knowledge are important for both natural cider and the Zapiain family. It is a natural drink with body, fizzy with its own bubbles from its own fermentation. It is light and easy to drink. A pleasure for both its customers. It should be drunk cold, but not too cold, in a long wide glass.

In short: A nice Sidra with a stronger than average farmhouse funky character. Nice
How: Bottle at Atari Gastroteka, San Sebastian Spain.
The look: Partly cloudy yellow-blonde body with no head to speak of.
To me a typical Sidra is: Funky aroma of medium intensity with many light color fruits in the back (not just apples). Body is medium in size, a texture that is both juicy and doughy and with minimal carbonation. Taste is a lot less apple-forward than a regular cider with apples but also various light color tropical/citrus/exotic fruits. Yeast presence accompanied by a bready sensation. Typical Sidras have a mild sourness and ends with a mild-medium acidic bite. Thirst quenching and also a bit nourishing.
This one: More intense farmhouse character, more doughy bread, a little more carbonation than average. Slightly above average example of the style. The wild farmhouse character of Sidras is apparently obtained by fermenting the liquid with a dead cow in the tank according to an internet rumor I just started in this rating.

Sampled a couple of times while in Basque country. Pours a cloudy, dandelion gold with zero head. Nose is solid, cheesy, apple skins, apple juice, some mild lemon, a little earthiness. Flavor is the same, sweet and tart, earthy and funky with a little bit of yeast. Lightly chalky finish.

Lovely light pressed apple juice aroma. A touch of cider yeast. Very pale and slightly hazy. Dry in spades, very sharp, almost a vinegary corner. Smoothish palate, doesn’t feel harsh. Slightly dirty taste, some yeast, some higher aromatics that make me think I’ll go blind. Quirky, and not for me.

I wish I could get this in Australia!!! Currently again in san sebastian where it is available in abundance. Pours a goldy yellow with carbonation visible on pour. Smells,. Sour apples, a lambic style Brett funk a little musky too. Tastes.. Bright slightly sour apples, slight funk/cheesey, crisp and dry mouthfeel. - I love this sidra, it reminds me of the basque country, I just wish some distributor would bring to my home town- hint hint international beer shop, Perth WA !

27/11 From Txotx (barrel) at Sidreria Galtzagorri, Bilbao. It poured hazy lighter yellow body with medium sized head (poured from high, of course). Now, my notes are in a smartphone that is not here currently so just rating it to keep in the order. Quite good, easy going Basque cider!

Bottle at Atari, Barcelona. Cloudy amber - white edges. Nice apple and bretty aroma. Light sour apples. Fruity. Crispy dryness. Nice fresh. High drinkability.

Bright yellow, slightly hazy and no head. Fanta aroma, with some crisp green apples thrown in. Some sugar too. Bit of bubbles, which don’t really survive in your mouth. Taste is more citric than expected, an interesting twist. Drinks quite easily, maybe not as refreshing as could be. Actually burns a very tiny bit from the sourness, which makes the ending quite nice. Interesting to try this Spanish cider. Still prefer French ones, though. (From a Valencian wine shop)

Served in a glass at a tapas restaurant in Spain. Totally unclear yellow/orange body with no head and moderate carbonation. Aroma is pretty rustic acidic apple and relatively much yeast. Flavor is semi-dry, acidic sour apple with yeast and hint of flowers. A bit unusually and definitively refreshing. Not complex, but it feels very real and I appreciate that a lot.
